Hello lovelies, in summer zucchini lands on our table in every form there is, and after years in Switzerland I still call it zucchetti half the time. It is the same vegetable either way. The one I make most often is zucchini stuffed with lentils and orzo, which has been our summer recipe for years.

Zucchini is quiet and that is exactly what makes it useful: it tastes mild, takes on any seasoning, and can be fried, stuffed, grilled, blended into soup or grated into cake batter. It turns creamy in the zucchini kohlrabi soup and festive as puff-pastry zucchini roses. Everything about choosing and prepping it lives in the zucchini guide.
Sweet works just as well: grated zucchini keeps a cake genuinely moist without tasting of vegetable. The zucchini hazelnut cake is the classic here, and the zucchini blondies with chocolate rarely survive the day. Most zucchini dishes are done in about 25 minutes, because the vegetable needs almost no prep and cooks fast. In the oven, courgette fries turn crisp; in a hot skillet a few minutes are enough for the slices to take on golden edges. Every recipe gives you its real cook time at the top of the card.
Anything stuffed or rolled looks like far more work than it is. Zucchini stuffed with lentils and orzo goes from the baking dish straight to the table, and puff-pastry zucchini roses are the plate people ask about all evening. Both can be prepped ahead and finished in the oven just before you eat.

Grated zucchini makes a batter remarkably moist and disappears completely in the finished cake. There is a hazelnut cake, two different versions with chocolate, and blondies that taste more like brownies made with white chocolate. All of them are baked vegan.
Courgette is a rewarding vegetable for the grill, because it cooks fast and takes char well. Cut into strips and threaded onto skewers it holds its shape, and the same idea works in the oven when it rains.
Zucchini is mild, so everything around it can be bold: herbs, lemon, toasted nuts or a punchy sauce. Bread belongs with the stuffed and baked dishes, and a bowl of pasta or rice with the lighter skillet dishes and soups.
Soups and stuffed bakes can be cooked completely ahead and often taste better the next day. Fried and roasted zucchini is best eaten fresh, because it softens as it sits. Cakes keep for several days well covered.
