Hello lovelies, on slow Sundays nobody here argues about what is for breakfast, only about who gets the pan. These savory crêpes with vegetables and fried egg have become our Sunday ritual, because they bring together everything this household can agree on: something thin and golden, plenty of colourful vegetables, melted cheese and an egg whose yolk runs across the whole plate at the first cut.

The biggest difference from sweet crêpes is already in the batter. I mix dried basil, paprika powder, salt and pepper straight into the flour, and while the batter rests for 10 minutes the seasoning soaks in. You taste it later in every single corner, and it is exactly the thing you cannot sprinkle on afterwards. If you want the same idea with no egg and no milk at all, my vegan crepes basic recipe is the base to season your own way.

The 2 teaspoons of sugar in the batter surprise people every time, but they are deliberate. Nothing about them tastes sweet, they only make sure the crêpes turn properly golden in the pan instead of staying pale. And yes, my very first crêpe still fails reliably after all these years. It is the offering the pan demands, and after that everything runs.

For the filling I cut the mushrooms, bell pepper, tomatoes and one small zucchini into dice as even as I can manage, so everything softens at the same time. Fresh basil and oregano only go in right at the end, otherwise they lose their aroma in the hot pan. If seasoned batters have won you over, do try my buckwheat pancakes with spinach, which go in the same direction, only nuttier.

I always fry the eggs last, in the same pan and with a knob of butter, so the yolk is guaranteed to still be running when the plates hit the table. A few slices of avocado and a generous grind of pepper, and that is it. If you like starting your weekend with eggs and tomatoes, you will almost certainly love my lentil shakshuka with poached eggs, which carries exactly the same slow Sunday mood.

Verena's notes

Tip from my kitchen: the seasoning belongs in the batter, not on the finished crêpe. Dried basil and paprika powder soak into the flour while it rests and give the crêpes a base flavour you can never rebuild afterwards. The 2 teaspoons of sugar in the batter are not a mistake either, they do not taste sweet at all, they simply make sure the crêpes brown properly. For the timing, what works here is to fry the vegetables first, then cook every crêpe, and only fry the eggs at the very end so the yolk is genuinely still running. If you want to get ahead the night before, cook the crêpes completely, stack them with baking paper in between and warm them briefly in the pan in the morning.

Mix the batter and let it rest

  1. In a bowl, combine the wheat flour with the sugar, salt, dried basil, paprika powder and pepper.
  2. In a second bowl, whisk the eggs and add the milk and the melted butter.
  3. Add the wet ingredients to the flour mixture and stir everything smooth until you have a thin batter.
  4. Cover the batter and let it rest for 10 minutes.

Fry the vegetables

  1. Peel and finely chop the onion, wash the fresh herbs and chop them finely.
  2. Wash the mushrooms, bell pepper, tomatoes and zucchini and cut them into even dice.
  3. Heat the olive oil in a pan, soften the onion and add the rest of the vegetables.
  4. Fry everything until the vegetables are tender, then season with the fresh herbs, salt and pepper and set aside.

Cook the crêpes

  1. Heat a non-stick pan over medium heat and grease it lightly.
  2. Pour in a small amount of batter and swirl the pan so it spreads thinly across the base.
  3. Cook the crêpe golden on both sides, which takes about 1 to 2 minutes per side.
  4. Repeat until all the batter is used up and keep the crêpes warm on a plate in the oven at 80°C (176°F).

Fried eggs and plating

  1. Melt the butter in the same pan and fry the 4 eggs until the white is set and the yolk is still runny.
  2. Season the fried eggs with salt and pepper.
  3. Lay one crêpe on each plate, spread the vegetables over it and fold the sides in loosely.
  4. Scatter over the grated cheese, set the hot fried egg on top and serve straight away with slices of avocado.

Frequently asked questions

  • Yes, and the batter is actually better for it. The resting time lets the flour swell and makes the crêpes more tender, so 10 minutes is the minimum and a few hours is ideal. Covered, the batter keeps for up to 12 hours in the fridge. Give it a quick stir before cooking, because the flour settles at the bottom, and add a splash of milk if it has thickened too much.

  • Usually the pan is not hot enough yet, or there is not enough fat in it. The batter should hiss quietly as it goes in, otherwise it sticks. The second common mistake is turning too early: wait until the edge visibly lifts away from the pan and the surface has gone matte, which takes about 1 to 2 minutes. And the very first crêpe fails almost every time, that is simply the price of a properly seasoned pan.

  • Almost anything that softens in a pan. Spinach with feta is a classic, sweetcorn with black beans and a little chilli takes them mexican, and leeks with plenty of cheese is the winter version. I also love using leftovers, a ratatouille or fried potatoes work beautifully. The only thing that matters is that the filling is not too wet, otherwise the crêpe goes soggy underneath.

  • Set the oven to 80°C (176°F) and put a plate inside. Stack the finished crêpes on it and cover them with foil, and they stay soft instead of drying out. If you want to separate them easily later, lay a piece of baking paper between each one. That way you can cook all 8 in peace and serve them together with the freshly fried eggs at the end.

  • Yes, with a gluten free flour blend at a 1 to 1 ratio. Give the batter 15 minutes more resting time, because gluten free flour takes up noticeably more liquid and the batter often needs another splash of milk afterwards. Cook the crêpes a touch thicker than usual, because without gluten there is no elasticity and very thin crêpes break as you turn them.
