Hello lovelies,

we have one breakfast here that the kids ask about the night before: will there be the little banana ones again tomorrow? Mini banana pancakes are exactly that: banana slices pulled once through a vegan pancake batter and pan-fried golden in coconut oil. Crisp outside, a warm, almost caramelized banana inside, and all of it in bite size.

If you like bigger egg-free pancakes, my fluffy vegan chocolate pancakes without eggs are the place to go. The mini banana pancakes here are the playful version: no stack on the plate, just lots of little bites you are allowed to eat with your fingers.

The batter without egg

The secret to fluffy vegan pancakes is plant milk with 1 tablespoon of apple cider vinegar. The vinegar reacts with the baking soda and the batter rises nicely in the pan. Stir it together only briefly and keep it thick, then it clings well to the banana slices.

The caramel sauce takes 10 minutes and needs only coconut milk, brown sugar and a little vegan butter. It turns dark and glossy and tastes very lightly of coconut, which goes beautifully with banana. If there are bananas left over, I stir them into a creamy chocolate banana porridge for breakfast the next morning, our second classic for ripe bananas.

For a brunch with friends I like to make a double batch, because the pancakes disappear faster than you can fry them. If you would rather have everything in the oven at once, the sheet pan apple pancake with cinnamon is the relaxed answer for a crowd.

When frying, several small batches beat one full pan. That way the coconut oil stays hot and every pancake gets its golden crust.

Verena's notes

Tip from my kitchen: I always cook the caramel sauce first, so it has time to thicken while the pancakes are in the pan. Use bananas that are just ripe, softer ones fall apart in the hot oil. For a children's party I put the mini pancakes on small wooden skewers so everyone can dip them into the sauce. If you like, scatter a few chopped walnuts or a touch of cinnamon over the top. Leftover pancakes I warm up the next day in a dry pan.

INSTRUCTIONS

Cook the caramel sauce

  1. Bring the coconut milk and brown sugar to a boil in a small saucepan and simmer over medium heat, stirring, for 5 to 7 minutes until the sauce visibly thickens.
  2. Take it off the heat and stir in the vegan butter, the vanilla extract and the salt. The sauce thickens further as it cools.

Mix the batter

  1. Combine the flour, brown sugar, baking powder, baking soda, cinnamon and salt in a bowl.
  2. Add the plant milk, apple cider vinegar and vanilla extract and stir only until no pockets of flour remain. A few small lumps are fine, overmixing makes the pancakes tough.

Fry the pancakes

  1. Peel the bananas and cut them into slices about 1.5 cm (1/2 inch) thick.
  2. Heat 1 Tbsp of coconut oil in a nonstick pan over medium heat.
  3. Dip the banana slices into the batter one at a time with a fork, let the excess drip off and place them in the pan. Fry for 1 to 2 minutes per side until golden.
  4. Flip them carefully so the banana and batter stay together. Lay the finished pancakes on paper towels and fry the next batch with a little fresh coconut oil.

Serve

  1. Dust the mini pancakes with powdered sugar and serve with the warm caramel sauce.

Frequently asked questions

  • Usually the batter is too thin or the pan is not hot enough yet. The batter should drop thickly from the spoon so it clings to the banana. Flip the pancakes only once the underside is golden and lifts easily from the pan, ideally with a narrow spatula or 2 forks.

  • Ripe but still firm bananas with a yellow peel and a few brown spots. They are sweet enough and do not fall apart in the pan. Save very soft, almost black bananas for banana bread.

  • The vinegar reacts with the baking soda and lifts the batter without egg. Together with the plant milk it makes a kind of vegan buttermilk that keeps the pancakes fluffy. You cannot taste it in the finished pancake.

  • Yes. In a screw-top jar it keeps about 1 week in the fridge. It sets when cold, so warm it briefly in a small pan or a water bath before serving until it is runny again.

  • Yes, with a gluten-free flour blend or with finely ground oat flour made from gluten-free oats. The batter turns a little thicker, so add 1 to 2 Tbsp more plant milk if needed.
