Hello lovelies,

on weekends we love a long, slow breakfast, and when the kids get to choose, they almost always pick these chocolate-filled pancakes. Every fluffy pancake hides a center of chocolate hazelnut spread that melts as it cooks and runs out when you cut into it. Add fresh strawberries and a little powdered sugar, and Saturday morning is saved.

Chocolate and pancakes simply belong together in our house. If you prefer the chocolate right in the batter, my fluffy chocolate pancakes are a vegan recipe with chocolate chips that has been with our family for years.

The frozen chocolate spread trick

To make sure the filling really stays in the middle, I freeze the chocolate spread first. I place it on parchment one teaspoon at a time, spread each portion into a flat disc and let it harden in the freezer for at least 1 hour. In the skillet, one disc goes onto the batter, another spoonful of batter goes on top, and as the pancake cooks the spread slowly melts into a soft center.

You don't need any eggs for these pancakes, by the way. Plant milk with a splash of apple cider vinegar turns into a kind of buttermilk, and together with baking soda and baking powder the batter rises beautifully light. The only important thing is not to stir it for too long, a few small lumps are perfectly fine.

If you are making breakfast for a crowd and don't want to stand at the stove forever, my sheet pan apple pancake is a lovely alternative. All the batter goes into the oven at once.

With our pancakes there is always a big bowl of strawberries or, when they are out of season, a few banana slices and berries from the freezer. And of course there is an argument over who gets the pancake with the biggest chocolate center.

Chocolate hazelnut spread is a big favorite in our family anyway, for example in my chocolate hazelnut babka with cardamom, which lands on our table on Sunday mornings.

I wish you a cozy weekend breakfast. Tell me what you like to fill your pancakes with.

Yours, Verena

TIPS

Verena's notes

Tip from my kitchen: I like to freeze the chocolate discs the evening before, then everything goes quickly in the morning. Cook the pancakes over medium heat, because over high heat they turn dark on the outside before the filling has melted. Instead of chocolate hazelnut spread, peanut butter or speculoos spread work too. And if you prefer something fruitier, put 1 tsp of jam in the middle instead, which doesn't need freezing.

INSTRUCTIONS

Freeze the chocolate spread

  1. Line a small board or plate with parchment paper or a silicone mat.
  2. Place the chocolate hazelnut spread on it one teaspoon at a time and spread each portion into a flat disc of about 4 cm (1 1/2 inches).
  3. Freeze the discs for at least 1 hour until completely hard.

Make the batter

  1. Stir the plant milk and apple cider vinegar together and let it stand for 5 minutes.
  2. In a large bowl, mix the flour, brown sugar, baking powder, baking soda, cinnamon and salt.
  3. Add the plant milk mixture, vanilla extract and warm melted butter and stir only until no dry flour is visible. A few small lumps are fine, stirring too long makes the pancakes tough instead of fluffy.

Cook the pancakes

  1. Warm a nonstick skillet over medium heat and brush it thinly with coconut oil.
  2. Add about 2 Tbsp of batter to the skillet and spread it into a small round pancake.
  3. Place a frozen chocolate disc straight from the freezer in the middle and cover it completely with about 1 Tbsp of batter. Take the discs out one at a time, they melt quickly.
  4. Cook the pancake for 2 to 3 minutes until bubbles form on the surface and the underside is golden brown. Flip and cook for another 1 to 2 minutes until golden.
  5. Keep going until the batter and chocolate discs are used up. Keep the finished pancakes warm under a clean kitchen towel.

Serve

  1. Stack the pancakes, dust them with powdered sugar and serve with fresh strawberries.

Frequently asked questions

  • Frozen, the spread stays exactly where it belongs in the middle of the pancake while you add batter and flip. It only melts slowly in the warm pan, and it runs out when you cut into the pancake. Soft spread would mix into the batter or leak out at the side.

  • The batter already has no egg and no cow's milk. Replace the butter with vegan butter or 3 Tbsp neutral oil and use a vegan chocolate hazelnut spread, then the pancakes are completely vegan.

  • The vinegar curdles the plant milk slightly, which creates a kind of plant-based buttermilk. Together with the baking soda and baking powder it forms lots of small bubbles, so the pancakes turn out fluffy without any egg. You can't taste the vinegar in the finished pancake.

  • Better not, because baking soda and baking powder start working right away, and by the next morning the pancakes would be flat. What you can do the evening before: portion the chocolate spread and freeze it overnight. Then the batter is mixed in 5 minutes in the morning.

  • Yes. They keep for 1 day in the fridge and reheat briefly in a skillet or in the toaster. To freeze, put a piece of parchment between the pancakes, then they keep for up to 2 months.
