Hello lovelies, these zucchini roses made from puff pastry are my favorite little eye-catcher for summer. Most people know apple roses – here comes the savory version with fine zucchini strips, vegan herb cream cheese and basil.

They are surprisingly simple: cut puff pastry into strips, spread with cream cheese, lay very thin zucchini strips on top, roll up and bake golden in a muffin tin. As they rise, the pretty rose blossoms form all by themselves.

Whether as an apéro bite, for a summer picnic or as a pretty side with a soup – the zucchini roses always look impressive and are still ready to go in just a few minutes.

Verena's notes

Tip from my kitchen: the thinner you shave the zucchini strips, the prettier and more evenly the roses roll up. Spread the cream cheese only thinly, otherwise the puff pastry gets too moist. If you set the roses slightly staggered in the muffin tin, they hold their shape as they rise – and come out of the oven looking like little blossoms.

Zucchini roses

Pretty vegan zucchini roses from puff pastry with herb cream cheese and basil. An easy appetizer and side dish, quickly assembled and baked in the oven.

INGREDIENTS

INSTRUCTIONS

  1. Preheat the oven to 180°C (356°F) degrees
  2. Roll out the puff pastry and cut it into 7-9 stripes lengthwise (approx. 3-4 cm/1-1.5”)
  3. Cut the zucchini in fine stripes using a peeler
  4. Spread the cream cheese on top of the puff pastry stripes
  5. Place the zucchini stripes on top, some cheese if desired, fresh basil and season with salt and pepper
  6. Now roll up the stripes one by one and place them into a greased muffin tray
  7. Bake for 30-40 minutes until the zucchin roses are golden brown

Frequently asked questions

  • The easiest way is with a vegetable peeler: run it lengthwise along the zucchini to shave off fine strips. The thinner the strips, the more easily they roll up into roses.

  • You can assemble them raw in the muffin tin and bake them just before serving. They look and taste best fresh from the oven – reheated, they lose a little of their crispness.

  • Instead of vegan cream cheese, a vegan pesto, hummus or a thin layer of tomato paste with herbs work too. Just make sure the layer is not too moist, otherwise the puff pastry turns soggy.

  • Many ready-made puff pastries are already vegan because they are made with vegetable oil instead of butter. A quick look at the ingredient list is enough to check.

  • They make a pretty appetizer, work well on a summer picnic and are a lovely side with a soup or a salad.
