Zucchini Roses

Ingredients

  • 1 vegan puff pastry (vegan)
  • Vegan cream cheese with herbs
  • Vegan cheese slices (optional)
  • 1 Zucchini/courgette
  • Fresh basil
  • Salt and pepper

Equipment: Baking oven

Instructions

  1. 1.Preheat the oven to 180°C (356°F) degrees
  2. 2.Roll out the puff pastry and cut it into 7-9 stripes lengthwise (approx. 3-4 cm/1-1.5”)
  3. 3.Cut the zucchini in fine stripes using a peeler
  4. 4.Spread the cream cheese on top of the puff pastry stripes
  5. 5.Place the zucchini stripes on top, some cheese if desired, fresh basil and season with salt and pepper
  6. 6.Now roll up the stripes one by one and place them into a greased muffin tray
  7. 7.Bake for 30-40 minutes until the zucchin roses are golden brown

Notes

Tip from my kitchen: the thinner you shave the zucchini strips, the prettier and more evenly the roses roll up. Spread the cream cheese only thinly, otherwise the puff pastry gets too moist. If you set the roses slightly staggered in the muffin tin, they hold their shape as they rise – and come out of the oven looking like little blossoms.
