2 zucchini recipes and an update from the garden

Ingredients
- 1 vegan puff pastry (vegan)
- Vegan cream cheese with herbs
- Vegan cheese slices (optinal)
- 1 Zucchini/courgette
- Fresh basil
- Salt and pepper
Instructions
- Preheat the oven to 180°C (356°F) degrees
- Roll out the puff pastry and cut it into 7-9 stripes lengthwise (approx. 3-4 cm/1-1.5”)
- Cut the zucchini in fine stripes using a peeler
- Spread the cream cheese on top of the puff pastry stripes
- Place the zucchini stripes on top, some cheese if desired, fresh basil and season with salt and pepper
- Now roll up the stripes one by one and place them into a greased muffin tray
- Bake for 30-40 minutes until the zucchin roses are golden brown
