2 zucchini recipes and an update from the garden

Ingredients

  • 1 vegan puff pastry (vegan)
  • Vegan cream cheese with herbs
  • Vegan cheese slices (optinal)
  • 1 Zucchini/courgette
  • Fresh basil
  • Salt and pepper

Instructions

  1. Preheat the oven to 180°C (356°F) degrees
  2. Roll out the puff pastry and cut it into 7-9 stripes lengthwise (approx. 3-4 cm/1-1.5”)
  3. Cut the zucchini in fine stripes using a peeler
  4. Spread the cream cheese on top of the puff pastry stripes
  5. Place the zucchini stripes on top, some cheese if desired, fresh basil and season with salt and pepper
  6. Now roll up the stripes one by one and place them into a greased muffin tray
  7. Bake for 30-40 minutes until the zucchin roses are golden brown
