From silky blended soups to chunky, comforting stews and light brothy bowls, soup is my favorite way to turn simple seasonal vegetables into a nourishing meal, quick enough for a weeknight and easy to make ahead. Most of my soups are fully vegan, a few are vegetarian, and every recipe is clearly labeled so you can pick exactly what fits your table.
