Hello lovelies,
as soon as it gets cooler outside, a pot of soup is on our stove at least once a week. This cauliflower fennel soup is my favorite at the moment. Fennel and onion are sweated with fennel seeds and a touch of honey, then the cauliflower simmers in vegetable stock until soft, and finally everything is blended smooth with a little cream. Crispy croutons made from bread and tofu go on top.

Fennel in soup is a tradition in my kitchen, I have been making my sweet potato fennel soup with orange for years. The new soup is milder and even creamier, because the cauliflower turns wonderfully velvety when blended.
Fennel, mild and aromatic
Raw fennel tastes clearly of aniseed, but when cooked it becomes surprisingly mild and slightly sweet. The fennel seeds boost the flavor a little without making the soup taste of licorice. I pick the delicate fronds off the bulb before cutting it and keep them for garnishing.

For me the croutons are the best part of this soup. I fry bread cubes and tofu cubes together in butter until golden and season them with salt, pepper, fennel seeds and a few chili flakes. The tofu makes the topping more filling, and the kids always fish out the crispy pieces first.
If you prefer fennel as a main dish, my fennel risotto with pears is a lovely idea for fall. There the bulb meets sweet pears, and the risotto turns out just as creamy as this soup.

The soup is wonderful to make ahead. I often cook it on Sunday and reheat it during the week, and only fry the croutons fresh.
And if you want to use up even more cauliflower, try my cauliflower potato soup for soup lovers. I wish you a cozy soup night.
