Hello lovelies,

this dish needs nothing more than a pot and a baking tray, and still it feels a little festive. The cauliflower potato mash is finished with truffle oil, which makes it wonderfully aromatic without being heavy. On top go green asparagus, smoked tofu, shallots and sun-dried tomatoes, all roasted together in the oven.

The idea comes from my truffle mashed potatoes from the Christmas menu, which we love so much that they have long stopped being a Christmas-only dish. With cauliflower the mash turns lighter and takes on a delicate, almost nutty flavor.

Why cauliflower and potatoes?

Cauliflower alone quickly turns watery, potatoes alone can be a little heavy. Together the potato brings the creaminess and the cauliflower the lightness. Let the vegetables steam off briefly after draining, before the milk and butter go in, and the mash turns out nice and firm.

Cauliflower is a regular guest in our kitchen anyway. When I have more time on the weekend, I turn it into my cauliflower parsnip gnocchi, real comfort food for cold days.

For the oven I use smoked tofu, because it turns crisp as it roasts and gives the dish a gently smoky note. Asparagus and tofu are a well-practiced team in my creamy spring pasta with asparagus and tofu too.

With truffle oil the rule is: use it sparingly and stir it in only at the end. Heat makes the aroma fade quickly, and a few drops over the finished plate do more than a big splash in the pot.

When guests come over, I also like to serve the mash with my truffle tofu strudel with mushrooms and chestnuts. I would love to hear how the cauliflower potato mash turned out for you.

Verena's notes

Tip from my kitchen: outside asparagus season I make this dish with halved Brussels sprouts or broccoli, both turn just as crisp on the tray. For a touch more truffle, marble the mash with a few drops of oil just before serving instead of stirring in more. If there is mash left over, I shape it into small patties the next day and fry them until golden.

INSTRUCTIONS

Prepare the mash

  1. Cut the cauliflower into florets, peel the potatoes and cut them into rough chunks.
  2. Cover both with salted water in a large pot, bring to a boil and simmer for about 20 minutes until everything is soft.

Roast the asparagus and tofu

  1. Meanwhile, preheat the oven to 200°C (392°F) top and bottom heat and line a baking tray with baking paper.
  2. Cut the woody ends off the green asparagus and peel the lower third.
  3. Slice the shallots and garlic, and cut the smoked tofu and sun-dried tomatoes into small cubes.
  4. Put everything on the tray, toss with 4 Tbsp of truffle or olive oil, salt and pepper and spread it out evenly.
  5. Roast for 20 to 25 minutes until golden and crisp, turning once.

Finish the mash

  1. Drain the cauliflower and potatoes and let them steam off in the open pot for 2 to 3 minutes.
  2. Add the plant milk, butter, 2 Tbsp of truffle oil, garlic powder and nutmeg and mash or blend everything until creamy. Season with salt and pepper.

Serve

  1. Spread the mash on plates and arrange the asparagus, tofu, shallots and tomatoes on top.
  2. Drizzle with a little truffle oil, add freshly ground pepper and garnish with microgreens.

Frequently asked questions

  • Yes, easily: use plant-based butter instead of butter. The milk in the recipe is already plant-based, and the smoked tofu, asparagus and tomatoes are vegan. Check the label of your truffle oil, most brands are simply olive oil and flavoring.

  • Sparingly and as late as possible. Truffle oil quickly loses its aroma over high heat, so I stir it into the finished mash and drizzle a few drops over the plate at the end. For the tray you can use ordinary olive oil.

  • In fall and winter, halved Brussels sprouts, broccoli florets or green beans work well. Brussels sprouts need about 25 to 30 minutes in the oven, broccoli and green beans about 20 minutes. The seasoning and the smoked tofu stay the same.

  • Drain the vegetables well and let them steam off in the open pot for 2 to 3 minutes. Then add the plant milk little by little until the texture is right. Cauliflower holds a lot of water, so the mash often needs less milk than a pure potato mash.

  • Yes, well covered the mash keeps for 2 days in the fridge. Reheat it slowly in a pot with a splash of plant milk, stirring well. The asparagus and tofu taste best fresh from the oven.
