Hello lovelies,

mashed potatoes are one of those dishes that simply make us happy at home. In the fall, though, I like to make this miso sweet potato mash even more. The sweet potatoes are boiled until soft and mashed until creamy with light miso paste, butter, a hint of ginger and a little plant milk. The result glows orange, tastes slightly sweet and has a wonderfully savory depth.

The last time I dressed up a mash like this was my cauliflower potato mash with truffle. Here the miso takes over that role, and the mash is still on the table in just over half an hour.

Why miso goes so well with sweet potatoes

Miso is a fermented paste made from soybeans, often together with rice or barley. It tastes salty and a little nutty and brings exactly what the sweet potato is otherwise missing. I use light miso, which is mild and keeps the flavor of the sweet potato in the foreground. Because the paste is salty itself, I only season with salt at the very end.

These days there is always a jar of miso in my fridge. I especially love stirring it into my creamy miso polenta with green vegetables, which is just as quick to make and just as comforting.

A simple potato masher is all you need, then the mash stays a little more rustic. With an immersion blender it turns completely smooth and almost silky, which is how my kids like it best.

As a side dish the mash goes with pan-fried tofu, mushrooms or roasted vegetables. With a fried egg and a little salad on top, it sometimes becomes a quick dinner at our house.

If you have sweet potatoes left over afterwards, try my sweet potato rösti with fried egg. I look forward to hearing how the miso mash works out for you.

Yours, Verena

TIPS

Verena's notes

Tip from my kitchen: after draining, let the sweet potatoes steam off in the hot pot for 1 to 2 minutes, then the mash won't turn watery. In the photos I added a few chili flakes and a drizzle of olive oil on top, which is not part of the basic recipe but looks lovely. For a vegan version I replace the butter with plant-based butter or 2 Tbsp of olive oil. If you like, toast a few sesame seeds and scatter them over together with the chives.

INSTRUCTIONS

Cook the sweet potatoes

  1. Peel the sweet potatoes and cut them into large cubes of about 3 cm (1 1/4 inches).
  2. Put the cubes into a pot, cover them with water and bring to a boil.
  3. Cook over medium heat for 15 to 20 minutes until completely soft.
  4. Drain the sweet potatoes, let them drip well and return them to the pot.

Season and mash

  1. Add the miso paste, butter, salt, pepper and ground ginger and pour in the plant milk.
  2. Mash everything with a potato masher or an immersion blender into a creamy mash. If it is too firm, add a little more plant milk.
  3. Season with freshly grated nutmeg and adjust the salt and pepper to taste.

Serve

  1. Spoon the mash into a serving bowl, finely snip the chives and scatter them on top.

Frequently asked questions

  • Light miso, also called shiro miso, is best. It is mild and slightly sweet and keeps the flavor of the sweet potato in the foreground. Red or dark miso tastes much stronger, so use only 1 Tbsp of it. Add salt only at the end, because the miso brings plenty of salt itself.

  • Yes. The plant milk is already vegan, you only need to replace the butter with plant-based butter or 2 Tbsp of olive oil. Most miso pastes are vegan, only varieties with dashi contain fish, so it is worth checking the label.

  • Both work. Boiled, the cubes are soft in 15 to 20 minutes, which is the quick way. Baked whole in their skins at 200°C (392°F) for about 45 minutes, they taste even more intense and slightly caramelized. Then simply scoop the flesh out of the skins and continue as described.

  • In the fridge it keeps well covered for 3 days. Reheat it in a pot with a splash of plant milk and stir well. Freezing works too, after thawing the mash is a little softer, and vigorous stirring makes it creamy again.

  • It goes with pan-fried tofu, sautéed mushrooms, roasted vegetables or green vegetables such as broccoli and bok choy. With a fried egg and a salad it becomes a light dinner.
