Hello lovelies,

on a gray autumn evening there is hardly anything cozier in our house than a tray full of stuffed sweet potatoes. While the sweet potatoes turn soft in the oven, I make a quick filling of chickpeas, bell pepper, tomato and basil. Vegan mozzarella goes on top, and after 10 minutes in the oven it pulls the most wonderful strings.

Stuffed vegetables from the oven are a real favorite in our family. In autumn my stuffed pumpkin with rice and feta often lands on the table too, and both dishes have one thing in common: the oven does most of the work, not you.

Why sweet potatoes and chickpeas go so well together

The sweet potato brings a mild sweetness and a soft, almost creamy texture. The chickpeas add bite and make the dish properly filling, while bell pepper, oregano and paprika give it a savory note that balances the sweetness. The tomato only goes into the skillet shortly before the end, so it stays juicy and fresh.

To keep the sweet potatoes from bursting in the oven, prick them all over with a fork first. After baking I halve them lengthwise and loosen the flesh a little with the fork, so every half takes more filling and everything comes together as you eat.

I love the sweet potato and chickpea combination in a pot on cold days too, for example in my sweet potato curry with chili naan. The curry is creamier, the stuffed sweet potatoes are more the oven dinner for the whole family.

By the way, our kids are allowed to top their own halves. Whoever wants more cheese gets more cheese, and whoever doesn't like bell pepper simply pushes it to the side. Most of the time there is a green salad on the side, and dinner is complete.

Chickpeas and roasted vegetables are a well-practiced team in our kitchen anyway. When friends come over, I like to make my loaded hummus with roasted veggies, a big platter for sharing with plenty of bread.

I hope you enjoy making these. Tell me in the comments what you like to stuff your sweet potatoes with.

Yours, Verena

TIPS

Verena's notes

Tip from my kitchen: choose sweet potatoes of about the same size so they are all done at the same time. The filling is also lovely with 1 handful of spinach wilted in the skillet at the end. If you like it spicy, swap part of the paprika for smoked paprika or add a little chili. With regular mozzarella the dish becomes vegetarian instead of vegan. Leftovers keep for 2 days in the fridge and crisp up again in the oven.

INSTRUCTIONS

Bake the sweet potatoes

  1. Preheat the oven to 200°C (392°F) conventional heat and line a baking sheet with parchment.
  2. Scrub the sweet potatoes well and prick them all over several times with a fork so they don't burst while baking.
  3. Place the sweet potatoes on the baking sheet and bake for 45 to 60 minutes until soft. Check with a knife at the thickest part that they are cooked through.

Make the filling

  1. Meanwhile, peel and finely chop the onion and garlic. Wash, seed and finely dice the bell pepper. Wash and dice the tomato. Wash and roughly chop the basil. Drain the chickpeas in a sieve.
  2. Heat the olive oil in a large skillet. Sauté the onion, garlic and bell pepper until soft and lightly browned.
  3. Add the chickpeas and fry for a few minutes.
  4. Season with oregano, paprika, sugar, salt and pepper. Stir in the diced tomato and half of the basil and cook everything for another 2 to 3 minutes.

Stuff and bake

  1. Halve the baked sweet potatoes lengthwise and loosen the flesh a little with a fork to make a hollow for the filling.
  2. Divide the chickpea and bell pepper filling among the sweet potato halves.
  3. Grate the vegan mozzarella or tear it into small pieces and scatter it over the filling.
  4. Bake the stuffed sweet potatoes for another 10 minutes until the cheese has melted and turned lightly golden.

Serve

  1. Take the sweet potatoes out of the oven, sprinkle them with the remaining basil and serve hot.

Frequently asked questions

  • Medium sweet potatoes of about 250 gr (8.8 oz.) need 45 to 60 minutes at 200°C (392°F). Push a sharp knife into the thickest part: if it slides in without resistance, they are done. Very thick ones take longer, small ones are ready after about 40 minutes.

  • Yes. Bake the sweet potatoes, make the filling, stuff the halves and let them cool. Covered, they keep for 2 days in the fridge. Before eating, scatter the cheese over them and bake at 200°C (392°F) for about 15 to 20 minutes until they are hot all the way through.

  • A vegan mozzarella or a grated vegan cheese labeled as melting works best. If you don't eat vegan, use regular mozzarella, then the dish is vegetarian.

  • Yes, when you are short on time. Prick the sweet potatoes several times with a fork and cook them on full power for 8 to 10 minutes, a little longer for big ones. Then stuff them as described and bake them in the oven. The skin will not get as flavorful as with the long bake, though.

  • For me, a green salad with a lemon dressing is the perfect side. A spoonful of vegan yogurt with garlic and herbs or some guacamole goes well too. For big appetites I put some bread on the table.
