there is a moment every August that I suspect everyone knows: the market haul is home, the fridge is already full, and you stand in front of it working out what is supposed to go where.
That is exactly where most of our vegetables died for years. Not because I forgot them, but because I filed them in the wrong place. The tomatoes turned mealy and tasted of nothing, the cucumbers developed glassy patches, and the eggplant had brown spots after 3 days even though it had been in the fridge. Because of the fridge, in fact.
So here it is, all in one place: which summer vegetables belong in the refrigerator, which are ruined by it, and above all why. Because once you know the 3 reasons, you never need the list again. You can work it out by looking at the vegetable.

Why do summer vegetables dislike the cold?
Because they come from warm places and never learned to handle cold. Tomatoes, eggplant, bell peppers, cucumbers and zucchini all originate in subtropical and tropical regions. A refrigerator, which should run at 4 °C (40 °F) or below, is not a neutral place for these plants. It is stress.
Winter produce is built the other way around. The UC Davis Postharvest Technology Center groups common root-type vegetables, winter hard-rind squashes, most tropical fruits and melons together at 13 to 18 °C (55 to 65 °F), which is warmer than any household fridge and cooler than a summer kitchen. Those plants are adapted to a cool cellar. Summer vegetables are adapted to a warm field.
What happens in between is called chilling injury, and the tricky part is the delay. In the fridge the vegetable still looks fine for days. Only once it warms up again do the glassy patches, the brown spots and the soft texture appear. That is why the mistake is so hard to catch. You do not see it when you make it. You see it 3 days later, when you have long stopped thinking about it.
Which summer vegetables should not be refrigerated?
The list is longer than most people expect, and it covers most of what a summer market sells. The University of Arkansas Cooperative Extension Service sorts fresh produce into what belongs in the refrigerator and what keeps better in a cool, dry, well ventilated spot.

Three summer staples are missing from that table, and they are the ones this article exists for: cucumbers, zucchini and eggplant. The UC Davis compatibility chart does not name them individually, but it does describe the band they sit in: alongside citrus and subtropical fruits, that group holds many fruit-type vegetables and is kept at 7 to 10 °C (45 to 50 °F). The cucumber has its own UC Davis fact sheet with a precise figure, and it lands warmer still, at an optimum of 10 to 12.5 °C (50 to 55 °F). Either way the practical conclusion is identical: warmer than a fridge, cooler than a summer kitchen. In a normal household that means the coolest, darkest, airiest corner you have, and the crisper drawer only as a short-term compromise.
One row in the table is also worth arguing with, because two American authorities weigh bell peppers differently. Arkansas puts them in the fridge. The Purdue University Vegetable Crops Hotline gives an optimum of 7 to 13 °C (45 to 55 °F) and warns that below 7 °C (45 °F) peppers may develop chilling injury, adding that colored peppers are generally less chilling sensitive than green ones. Both are right about different goals: the fridge buys you days, the counter buys you flavor and crunch. Where experts weigh things differently, I would rather say so than pretend there is only one answer.
And one rule sits above all of it: anything purchased pre-cut, peeled or packaged should be refrigerated, whatever the whole vegetable would want. Half a cucumber, a cut melon, the rest of the squash. They all go in, covered.
What chilling injury actually does
Cold destroys two things at once in these vegetables: the cell structure and the aroma. The first explains the texture, the second explains the disappointed face at the first bite of a refrigerated tomato.
This is where the numbers exist, because US postharvest research has measured them precisely. UC Davis states that tomatoes are chilling sensitive below 10 °C (50 °F) if held for longer than 2 weeks, or at 5 °C (41 °F) for longer than 6 to 8 days. The listed consequences are a failure to ripen and develop full color and flavor, blotchy color development, premature softening, surface pitting and increased decay. A household fridge runs well below that threshold, which is why a supermarket tomato that has been chilled never quite recovers. Cucumbers are even less patient. UC Davis puts them at the same 10 °C (50 °F) threshold, but the damage starts after more than a day to 3 days, depending on temperature and cultivar. The consequences there are water-soaked areas, pitting and accelerated decay, and the injury is cumulative, which means a cucumber that spent 2 days in a cold truck arrives with part of its budget already spent. As for the texture, what happens is essentially a slower, milder version of freezing. Cell walls take damage, water leaks out, and firm becomes glassy and then mushy. That is also why high-water produce never survives the freezer raw, and why the fridge is simply the gentler form of the same effect.
Ethylene: why one vegetable ruins its neighbors
Some produce releases a ripening gas, and other produce reacts to it by ageing faster. Put the two side by side and you shorten the life of both. This is the second reason vegetables spoil, and the only one you cannot see, smell or taste.
The University of Arkansas Cooperative Extension Service names both sides of it. High-ethylene-producing foods such as apples, avocados, bananas, melons, peaches, pears and tomatoes should be stored separately from ethylene-sensitive items such as broccoli, cabbage, cauliflower, leafy greens and lettuce, because ethylene makes the sensitive group ripen or deteriorate more quickly.
Purdue adds bell peppers to the sensitive side of that list, warning against storing them beside ethylene-producing fruit such as ripening cantaloupe. UC Davis then supplies the specifics that matter most in a summer kitchen. Ripening tomatoes produce ethylene at a moderate rate, and co-storage with sensitive commodities such as lettuce and cucumbers should be avoided. The cucumber fact sheet says the same thing from the other direction and is blunt about it: do not mix commodities such as bananas, melons and tomatoes with cucumber.
In practice all of that collapses into one instruction: keep the fruit bowl away from the vegetable basket. That is the whole intervention. Tomatoes next to cucumbers on the same board is a reliable way to lose the cucumber.
And a second pairing that has nothing to do with ethylene but ends up side by side just as often: avoid storing potatoes and onions together, because they make each other spoil faster. Ours have lived in 2 separate baskets ever since.
The third reason: moisture loss
The quietest of the 3 reasons is water, and it decides a week of shelf life more often than temperature does. Every fruit and vegetable is slowly drying out from the moment it is picked, and the ones that hold the most water show it fastest.
That is precisely why summer produce is so demanding. Cucumbers, tomatoes, zucchini and lettuce are almost entirely water, and every gram they lose to the surrounding air is immediately visible as a wrinkle or a limp leaf. A potato takes weeks to show the same thing. A head of lettuce takes 2 hours on a sunny windowsill.
It is also why anything cut belongs in a different category altogether. The skin is the evaporation brake, and a cut surface simply does not have one. That is the practical reason behind the rule that all produce purchased pre-cut, peeled or packaged should be refrigerated: it has already lost its own protection, so it needs the cold and the cover instead.
The balance to aim for is high humidity without wet surfaces, and the UC Davis numbers in the table above show how narrow that target is. Their tomato guidance is explicit about both halves of it: high relative humidity is essential to maximize postharvest quality and prevent water loss, while extended periods of higher humidity or condensation may encourage the growth of stem-scar and surface molds. In a home kitchen that translates to a crisper drawer you wipe out now and then, and produce that is dry on the outside when it goes in.
Which brings us to the rule broken most often of all: wash right before you use something, not before you store it. Excess moisture makes many items spoil faster, so rinsing the whole haul when you get home creates exactly the problem you were trying to avoid. For firm produce such as melons, cucumbers, carrots or potatoes, a clean produce brush does more than a long soak. Leafy greens are the one exception that can be washed ahead, and only if they are dried very thoroughly first.
Where in the fridge should vegetables go?
In the crisper drawer, for one simple reason: it is the mildest part of the refrigerator. For anything that should be chilled but does not much enjoy cold, that is the right address.
The setting matters more than the shelf, though. Perishable produce should be stored in a clean refrigerator at 4 °C (40 °F) or below. Below that headline number, the useful way to think about storage is not one temperature but three bands, which is how UC Davis groups produce that can safely travel together.

Read that table next to your own fridge and the whole problem becomes obvious. A household refrigerator runs at 4 °C (40 °F) or below, colder than either of the two warmer groups. Winter hard-rind squashes and melons are named outright in the 13 to 18 °C group. The fruit-type vegetables of a summer market sit just above the fridge instead, in the 7 to 10 °C band or a degree or two warmer. Two entire tiers of summer produce have no home inside a normal refrigerator at all, which is exactly why they end up disappointing.
Herbs deserve their own paragraph, because they are the easiest win in the whole kitchen. Basil is cold sensitive and turns black in the fridge, so it does best in a vase of clean water at room temperature, like a bunch of flowers. Tender herbs such as parsley, cilantro, mint and dill last longer with their stem ends in a small amount of clean water and their leaves kept dry. Woody herbs such as rosemary, thyme, oregano and sage keep well wrapped in a slightly damp paper towel in the fridge.

What about a heat wave?
When it stays hot for days the maths changes, because 32 °C (90 °F) in the kitchen is no good for summer vegetables either. At that point short-term chilling is the lesser evil compared to certain spoilage.
The practical rule that has served us well: if the kitchen sits well above 25 °C (77 °F) for several days and you are going to use the vegetables within 2 to 3 days anyway, the crisper drawer is fine. The flavor loss in a tomato is real, but a spoiled tomato tastes of nothing at all, permanently. That is my own judgement call from a lot of hot summers, not the recommendation of any authority.
What stays out regardless of the weather: potatoes, onions and garlic. They turn soft and rot in the damp air of a refrigerator. For them, the darkest and airiest spot in the house always beats the crisper drawer.
And the best heat protection is a different one anyway: buy smaller, buy more often. Nobody needs a week's supply of zucchini in August.
The most common summer storage mistakes
Almost every loss in our kitchen traces back to the same 5 mistakes, and none of them is exotic.
- Everything into the fridge, wherever it fits. The most common mistake and the most expensive one, because it hits the most flavorful produce of the year.
- Fruit and vegetables in one bowl. Ethylene does the rest, usually within a few days.
- Leaving everything in the plastic bag. Condensation collects inside, and a damp patch is where every rot begins.
- Washing produce before storing it. Extra moisture makes many items spoil faster, so washing belongs immediately before preparing, not before putting things away.
- Potatoes and onions in the same basket. The classic, and a genuine problem rather than an old wives' tale.
One more thing worth knowing about the washing rule, because it feels counter-intuitive: produce with an inedible peel or rind still needs washing, since a knife can carry contamination from the outside to the inside when you cut into it. Rinse under clean, cool running water and rub gently with your hands, without soap, bleach or detergent, none of which is recommended on fresh produce. And avoid soaking anything in the sink itself, since home sinks carry contamination of their own; if something genuinely needs a soak to loosen dirt, use a clean bowl and finish under running water.
It is worth saying plainly what all 5 of these have in common, because that is the part that sticks. None of them is carelessness. Every one of them is a reasonable-sounding habit that happens to fight the vegetable rather than work with it, which is exactly why they survive in so many kitchens for so long.
What if you still have too much?
Then you cook it, before it turns rather than after. Friday has become the day in our house when everything that survived the week gets used up.

Here in Bali the question looks completely different, by the way. At 30 °C (86 °F) and high humidity there is no cool pantry, no cellar and no shaded larder. So I shop every 2 days, in small quantities, and store almost nothing. It was an adjustment at first, but it has brought our vegetable waste down to nearly zero. Sometimes the real trick to storing food is storing less of it.
