Hello lovelies, I’m happy to present 2 more recipes in cooperation with Alnatura to you this time with the delicious Alnatura Basmati Rice. We keep it exotic after testing the Coco-Drink (you can find the recipes here). Exotic suits us well, we really like Asian Food and rice is always a part of it. Did you know that Basmati in Hindi means “fragrance”? And so basmati rice is often called fragrant rice. It is a distinctly aromatic rice actually originated in Afghanistan. Basmati is regarded as the most precious kind of rice worldwide and the best and most nutrient kinds are from India and Pakistan.

Basmati rice comes from India and is cultivated according to organic guidelines. I was creative with this tasty rice that develops a delicate fragrance once cooked – and turned it into two completely different recipes.

Rice donuts

At first I made fun rice donuts: cooked basmati rice pressed into a donut mold, turned out and topped sweet or savory just as you like. They are a playful eye-catcher my kids adore – and thanks to the many topping and dip ideas, every donut becomes a little work of art. I’ve put the full recipe with all the toppings and dips together for you as its own recipe.

The second recipe is a tasty parfait that you can easily create with the remaining rice.I’m not quite sure how you handle it but I tend to always cool too much rice and therefore I’m grateful for any ideas what to do with all the left over rice. I was inspired to create this parfait by sticky rice with mango, that we ate a lot in Thailand and that I liked very much.

You can enjoy this parfait for breakfast, as a snack or even a dessert. And I recommend to eat all layers together, so that the delicious taste of the delicate basmati rice, the sweet mango and the coconut strawberries come into their own.

Tip from my kitchen: this parfait is the perfect way to use up leftovers – whenever i have cooked too much rice, it becomes a lovely dessert the next day. layer the components into clear glasses just before serving so the colors of mango, strawberry and rice really shine. and do eat all the layers together, that is when the special taste of basmati, mango and coconut strawberries comes into its own.

Rice parfait with mango and strawberry

Rice parfait with mango and strawberry: creamy basmati rice in coconut milk, layered with fruity puree. A vegan dessert and a smart way to use leftover rice.

INGREDIENTS

INSTRUCTIONS

  1. Cool the rice according to the package instructions (or use leftover rice)
  2. Let cool off and than mix with 6-8 Tbsp coconut milk
  3. Add 2-3 Tbsp maple syrup (depending how sweet you like it) and add vanilla
  4. Put in 4 jars
  5. Peel the mango and puree the fruit flesh
  6. Add on top of the rice
  7. Wash the strawberries, cut the green stem and puree with 3-4 Tbsp coconut milk and 1-2 tbsp maple syrup
  8. Add to the jars
  9. Top with granola and fresh berries - serve chilled

  • basmati rice is ideal because it develops a delicate fragrance as it cooks and stays light and fluffy. you can also use leftover rice from the day before, which turns plain leftovers into a lovely dessert in no time.

  • yes, you can make the rice mixture and the fruit purees the evening before and chill them. layered in jars and covered, the parfait keeps for 1 to 2 days in the fridge and tastes best when thoroughly chilled.

  • the fruit is flexible: peach or banana work well in place of mango, and raspberries, blueberries or blackberries can replace the strawberries. out of season, simply puree frozen and thawed berries.

  • you control the sweetness with the maple syrup. start with 2 tablespoons, taste and add more if needed. since ripe mango is naturally sweet, a little syrup often goes a long way.

  • yes, the recipe is fully vegan. instead of cream, full-fat coconut milk gives it a creamy texture and it is sweetened with maple syrup, so there are no dairy products or refined sugar.
