Hello lovelies, today I’m sharing one of my favorite recipes to make together: colorful rice donuts. These fun rice rings are made from fragrant basmati rice that is simply pressed into a donut mold and then turned out – with no baking at all. My kids especially light up every time the little rice donuts land on the table.

The best thing about rice donuts is how versatile they are: you can top them savory with avocado, basil and sesame or with tomato and cashew mozzarella – or sweet with mango, berries, mint, edible flowers and chocolate creme. Lovely dips like balsamic and oil, coconut yogurt with berries or soy sauce with sesame round it all off, so everyone finds their favorite donut.

The most fun part is decorating the rice donuts together – everyone shapes their own little eye-catcher. On a warm summer evening they taste wonderful alongside a light salad, and with the sweet version you have dessert built right in.

Tip from my kitchen: rice donuts work best with well-cooled, still slightly sticky rice – that way they reliably hold their shape once turned out. Press the rice really firmly into the mold and brush it with a little coconut oil first. It is especially lovely when the whole family joins in: my kids love the sweet version with mango, berries and chocolate creme, while I prefer the savory one with avocado and tomato.

INGREDIENTS

Donuts:

  • 250grbasmati rice
  • coconut oil for greasing the mold

Toppings (choose your favorites):

  • avocado, basil, sesame
  • tomato, cashew mozzarella, basil
  • mango, berries, mint, edible flowers, chocolate creme

Dips (choose your favorites):

  • balsamic and oil
  • coconut yogurt with berries
  • soy sauce with sesame

INSTRUCTIONS

  1. Cook the basmati rice according to the packet instructions and let it cool completely
  2. Grease the donut mold with coconut oil
  3. Press the rice firmly into the mold
  4. Carefully turn the mold over so the rice donuts release easily
  5. Top the donuts however you like and serve them with the dips

Frequently asked questions

  • basmati rice is ideal because it turns slightly sticky as it cooks and therefore holds its shape well. you can also use leftover rice from the day before – just make sure it is well cooled, then it presses firmly into the mold.

  • grease the donut mold with a little coconut oil first and press the rice in really firmly. when you carefully turn the mold over, the rice donuts release almost on their own – this works best with well-chilled rice.
