Hello lovelies, today I’m sharing one of my favorite recipes to make together: colorful rice donuts. These fun rice rings are made from fragrant basmati rice that is simply pressed into a donut mold and then turned out – with no baking at all. My kids especially light up every time the little rice donuts land on the table.

The best thing about rice donuts is how versatile they are: you can top them savory with avocado, basil and sesame or with tomato and cashew mozzarella – or sweet with mango, berries, mint, edible flowers and chocolate creme. Lovely dips like balsamic and oil, coconut yogurt with berries or soy sauce with sesame round it all off, so everyone finds their favorite donut.

The most fun part is decorating the rice donuts together – everyone shapes their own little eye-catcher. On a warm summer evening they taste wonderful alongside a light salad, and with the sweet version you have dessert built right in.

These rice donuts are part of my 2 delicious recipes with basmati rice – where you’ll also find the creamy rice parfait with mango and strawberry.
If you’re looking for more playful ideas for the whole family, do try my vegan mango and raspberry ice cream, the sweet quinoa with apple compote or the creamy chia pudding basic recipe.
