Hello lovelies,

some evenings dinner has to be quick and still taste like something special. That is exactly why I love this falafel wrap: crispy pan-fried falafel, red cabbage massaged with za'atar, tomato, cucumber, hummus and a fresh yogurt sauce with lemon and parsley, all in a warm tortilla. Dinner is on the table in 25 minutes, and everyone fills their wrap just the way they like it.

Wraps are a constant favorite in our house anyway, especially when the kids cook along. If you want even more protein and no flour at all, my high-protein cottage cheese wrap without flour is a lovely alternative for your lunch break.

The trick with the massaged red cabbage

Raw red cabbage is quite firm. But if you slice it finely and knead it firmly with your hands for 2 to 3 minutes with za'atar, olive oil and a pinch of salt, it turns soft, juicy and slightly glossy. Za'atar is a spice blend from the Middle East with thyme, sesame and tangy sumac. It gives the cabbage an herby, slightly lemony note that goes wonderfully with the falafel.

For this quick wrap I usually buy the falafel ready-made: you can find good ones in the chilled section or in Middle Eastern grocery stores. In a pan with a little olive oil they get crisp all over in just a few minutes. Meanwhile I stir the yogurt sauce together and warm the tortillas very briefly in a dry pan so they do not tear when rolled.

For 4 wraps you only need half a red cabbage, and I like to turn the other half into a crunchy salad. My Asian red cabbage salad with peanuts is perfect for that, because it tastes even better the next day.

When it comes to hummus, you have a choice: a good store-bought one is perfectly fine, but homemade is even creamier. My green spinach artichoke hummus with tahini also brings a lovely color into the wrap. For a lunchbox, I wrap the wraps tightly in parchment paper so they keep their shape.

Give this falafel wrap a try and tell me in the comments what you like to fill your wraps with.

Yours, Verena

TIPS

Verena's notes

Tip from my kitchen: slice the red cabbage as finely as you can, then it massages best and sits nicely in the wrap. Red cabbage stains, so massage it in a bowl rather than directly on a wooden board. If you like, add a few pomegranate seeds or a little chili to the filling. For the kids I often leave out the za'atar for sprinkling and serve the yogurt sauce on the side.

INSTRUCTIONS

Prepare the vegetables

  1. Cut the core out of the red cabbage and slice the cabbage finely with a mandoline or into very thin strips with a knife.
  2. Wash, peel and finely dice the cucumber. Dice the tomato or halve the cherry tomatoes.

Season the red cabbage

  1. Put the red cabbage in a bowl, sprinkle with 2 tsp za'atar, 1 Tbsp olive oil and a pinch of salt and massage it firmly with your hands for 2 to 3 minutes until it softens.
  2. Season to taste with salt and pepper.

Mix the yogurt sauce

  1. In a small bowl, stir together the Greek yogurt, lemon juice, finely chopped garlic and parsley. Season with salt and pepper.

Fry the falafel and warm the tortillas

  1. Fry the falafel in a pan with 2 Tbsp olive oil over medium heat for 5 to 6 minutes until golden all over.
  2. Warm the tortillas one at a time in a dry pan for about 30 seconds per side until soft and pliable.

Fill the wraps

  1. Spread each tortilla with 1 Tbsp hummus and place an even amount of falafel in the middle.
  2. Top with the seasoned red cabbage, add the diced tomato and cucumber and drizzle with the yogurt sauce.
  3. Sprinkle with a little za'atar and fresh herbs.
  4. Fold the sides of the tortilla over the filling and roll the wrap up tightly from the bottom. Cut in half if you like and serve straight away.

Frequently asked questions

  • Za'atar is a spice blend from the Middle East, usually made from dried thyme or oregano, toasted sesame seeds, sumac and salt. You can find it in Middle Eastern grocery stores or well-stocked supermarkets. As a substitute, mix 1 tsp dried thyme with 1 tsp sesame seeds and a little grated lemon zest.

  • Yes, easily: replace the Greek yogurt with an unsweetened soy or oat yogurt. Falafel and hummus are usually vegan already, but it is still worth checking the ingredient list of your tortillas.

  • Do not overfill the tortilla and leave a border of about 3 cm (1 1/4 inch) all around. First fold both sides over the filling, then roll the wrap up tightly from the bottom. Place it seam side down on the plate or wrap it in parchment paper to take along.

  • The massaged red cabbage keeps for 2 days and the yogurt sauce for 3 days in the fridge. I prefer to roll the wraps fresh so the tortilla does not get soggy. For a lunchbox, I pack the sauce separately in a small jar.

  • Both work. In a pan with 2 Tbsp olive oil, ready-made falafel get crisp all over in 5 to 6 minutes. In the oven, bake them at 200°C (392°F) for about 10 to 12 minutes and turn them once, which saves a little fat.
