Hello lovelies,

as soon as it gets cooler outside, red cabbage lands in our vegetable box again. And as much as I love it braised, my favorite autumn recipe is raw: an Asian red cabbage salad with carrots, bell pepper, cilantro and roasted peanuts in a dressing of sesame oil, soy sauce, ginger and lime. It is crunchy, fresh, glows in every color and tastes almost even better the next day.

Red cabbage with Asian flavors is a real favorite in our house right now. If you would rather have it warm, my udon noodles with red cabbage and peanut sauce are the warm noodle version with a very similar taste.

The dressing makes the difference

Raw red cabbage is firm and needs a dressing with character. The soy sauce brings salt and savoriness, the rice vinegar and lime bring acidity, the honey rounds it all off and the sesame oil adds that nutty aroma you instantly connect with Asian cooking. Fresh ginger and garlic give it a kick. Do let the salad rest for 30 minutes, then the cabbage turns tender and soaks up all the flavors.

For me the peanuts are the icing on the cake. Roasted and salted, they give the salad crunch and remind me of my summer rolls with peanut dip, which we never leave off a summer buffet. I chop them roughly and sprinkle part of them on right at the end so they stay crisp.

For dinner I serve pan-fried halloumi or tofu with it, threaded onto wooden skewers. It looks pretty and the kids reach for it much more happily. By the way, the salad is also a great side for a barbecue or a packed lunch for the office.

If you would like to try raw red cabbage in a bun, bake my vegan bao buns with pulled mushrooms. There, fine strips of red cabbage bring freshness and crunch.

Give this red cabbage salad a try and tell me in the comments whether you prefer it with halloumi or with tofu.

Yours, Verena

TIPS

Verena's notes

Tip from my kitchen: I always shred the red cabbage on a mandoline, it turns out paper-thin and soaks up the dressing much better. Keep the peanuts separate if you are planning leftovers for the next day. Instead of bell pepper, cucumber or edamame work well too. If you like heat, add a finely chopped chili to the dressing. With maple syrup and tofu the salad is vegan.

INSTRUCTIONS

Prepare the vegetables

  1. Wash the vegetables. Remove the core from the red cabbage and shred it finely or cut it into very thin strips.
  2. Peel the carrots and cut them into fine matchsticks or grate them coarsely. Seed the bell pepper and cut it into thin strips.
  3. Slice the spring onions into fine rings, roughly chop the cilantro and roughly chop the peanuts.

Stir together the dressing

  1. Peel the garlic and ginger and grate them finely.
  2. In a small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, lime juice, ginger and garlic and season with salt and pepper.

Dress the salad

  1. Put the red cabbage, carrots, bell pepper, two thirds of the spring onions and half of the cilantro into a large bowl.
  2. Pour the dressing over it and toss everything thoroughly.
  3. Let the salad rest in the fridge for at least 30 minutes.

Fry the halloumi and serve

  1. Slice the halloumi or tofu and fry it in a dry pan for 2 to 3 minutes per side until golden. Tofu needs 1 Tbsp oil.
  2. Stir the salad once more and taste it. Sprinkle with the peanuts, the remaining spring onions and cilantro and serve with the halloumi or tofu.

Frequently asked questions

  • Yes, red cabbage salad is ideal for making ahead. Tightly covered it keeps in the fridge for 2 to 3 days and even gets more tender over time. I only add the peanuts and cilantro shortly before serving so they stay crunchy and fresh.

  • The secret is a very fine cut. Shred the red cabbage paper-thin, ideally on a mandoline. If you like it even softer, massage it with a pinch of salt for 1 to 2 minutes before dressing it. The 30 minutes in the dressing do the rest.

  • Replace the honey in the dressing with maple syrup or agave syrup and serve pan-fried tofu instead of halloumi. All the other ingredients are already plant-based.

  • For dinner I serve it with pan-fried halloumi or tofu, and sometimes with a little rice or rice noodles. As a side it goes well with grilled vegetables, burgers, bao buns or spring rolls.

  • If you have a peanut allergy, roasted cashews, sunflower seeds or sesame seeds work well. They bring the same nutty crunch to the salad.
