Hello lovelies, apples are the most patient ingredient in my kitchen: they wait for weeks until you have time, and then they go with almost anything. Around here they end up in a cake as often as in a salad. My favorite is the Swiss apple tart with custard, which is what Germany would call an apple cake, with a layer of set cream on top.

Sweet is the obvious route: apple crumble cake, apple cinnamon muffins, or apple pancakes when there is no time. For breakfast I grate apple into overnight oats or straight into waffle batter.
Savory apple is the underrated half, and it is the best foil there is to cabbage, lentils and nuts. A kohlrabi salad with apple and lamb's lettuce with apple and lentils are fixtures here all autumn. Frequently asked questions
Pancakes, overnight oats and compote are done in under 20 minutes, because the apple only gets grated or cut into wedges. Muffins take a little longer but come together in one bowl. Every recipe lists its real prep time at the top of the card.
Apple is the foil to everything earthy and robust: cabbage, lentils, nuts, beetroot and sharp dressings. Here it goes into salads with kohlrabi or lamb's lettuce, and into creamy autumn soups. The acidity does the work, not the sweetness.
The Swiss apple tart with custard looks like more effort than it is: thin pastry, apple wedges laid close together, and a cream on top that sets in the oven. If you want something simpler, take the apple crumble cake from a loaf tin. Both can be baked the day before.
Grated apple works in overnight oats, in waffle and pancake batter, and in yeast bakes like brioche or muesli buns. All of it can be prepared the evening before.
Jam, compote and tart take the biggest quantities. An apple and carrot jam clears a whole crate and then keeps for months in the jar. Cakes and tarts also use several apples per tin.
Most of them are fully plant-based. Every recipe shows its diet right on the card, so there is no surprise once you start baking.
Anything sweet you can eat with your hands: muffins, waffles, pancakes and muesli buns. Grated into the batter nobody notices there is fruit in it, and in a salad apple works as the gateway ingredient for everyone who usually leaves the raw vegetables on the plate.
Cakes, tarts and muffins often taste even better the next day. Jam and compote are pantry recipes anyway. Salads with raw apple are best made fresh, otherwise the apple loses its bite.
