Hello lovelies,

as soon as the first apples from the tree behind the house land in the kitchen, the baking starts here, and my apple streusel muffins with cinnamon are the first thing out of the oven. A light batter with apple pieces, a thick cap of crunchy cinnamon butter streusel on top, and the whole kitchen smells of autumn. The recipe makes 12 muffins and takes 45 minutes including baking.

Many of you have been baking my vegan apple cinnamon muffins without egg for years, and they stay my recipe whenever someone wants to bake without egg and butter. This streusel version is their classic sister: egg, milk and butter in the batter, which makes them a little moister and more cake-like, and a layer of streusel that crunches when you bite in.

The streusel really is half the battle. Cold butter, flour, sugar and cinnamon get rubbed into coarse crumbs with your fingertips and never kneaded, then they stay crunchy in the oven instead of melting into a crust. The same streusel goes on my vegan apple cake with crumbles in autumn, there as a layer over the whole cake.

For the batter the rule is the same as for every muffin: stir only until flour and liquid are just combined, a few lumps may stay. Stir for too long and you get tough muffins. I learned that with my rhubarb streusel muffins for spring, which work on exactly the same principle, only with a sour fruit instead of a sweet one.

Apples are not the end of this recipe, though. In summer, blueberries and raspberries go into the same batter here, as in my berry muffins with fresh berries, and the cinnamon streusel suits them surprisingly well too.

I hope you bake these muffins soon, ideally a double batch straight away, because here they have never lived longer than 2 days. And once the plums are ripe, do try my plum chocolate muffins with dark chocolate too, my other autumn favorite.

TIPS

Verena's notes

Tip from my kitchen: I melt the butter for the batter first so it is lukewarm by the time it meets the egg, hot butter would start to cook it. I cut the apple dice about the size of a hazelnut, smaller and they vanish into the batter, bigger and they make the muffins soggy. You can make the streusel the day before and keep it cold, it gets even crunchier in the oven that way. And really only fill the liners two thirds full, the streusel needs room, otherwise everything runs over the edge.

INSTRUCTIONS

Prepare

  1. Preheat the oven to 180 °C (350 °F) top and bottom heat and line the muffin tin with paper liners or grease it.
  2. Peel and core the apples and cut them into small dice. Toss them with the lemon juice in a bowl so they do not brown.

Batter

  1. In a large bowl mix the flour, baking powder, cinnamon and brown sugar.
  2. In the second bowl whisk the egg, add the milk, melted butter and vanilla and stir to combine.
  3. Pour the wet ingredients into the dry ones and stir only until just combined. Do not overmix, or the muffins turn tough.
  4. Fold in the apple dice.
  5. Fill the liners two thirds full with batter.

Streusel

  1. In the small bowl mix the flour, sugar and cinnamon, add the cold butter and rub it in with your fingertips until coarse crumbs form.
  2. Scatter the streusel over the muffins and press it down lightly.

Bake

  1. Bake in the preheated oven for 20 to 25 minutes, until the streusel is golden brown and a toothpick comes out clean.
  2. Let them rest briefly in the tin, then cool on a rack.

Frequently asked questions

  • Tart, firm varieties such as Boskoop, Braeburn, Elstar or Granny Smith. They hold their shape in the batter and bring a little acidity against the sweet streusel. Sweet, mealy apples collapse into sauce while baking. You can leave the skin on if you dice the apples small, and the lemon juice keeps them from browning.

  • Almost always because the batter was stirred for too long. As soon as flour and liquid meet, gluten forms, and every extra stir makes the muffins denser. Stir only until no dry flour is visible, small lumps are fine. The second cause is too much flour, so weigh it instead of measuring with cups.

  • The butter has to be cold and is only rubbed into the flour and sugar with your fingertips, never kneaded, until coarse crumbs form. Let the crumbs stay different sizes. After baking, cool the muffins on a rack and only cover them once they are completely cold, otherwise the streusel softens in the steam. The next day a short spell at 160 °C (320 °F) in the oven makes it crunchy again.

  • Yes. Replace the egg with 60 gr (2 oz.) of apple sauce or 1 tablespoon of ground flaxseed mixed with 3 tablespoons of water, the milk with oat or soy milk, and the butter in the batter with neutral oil or melted vegan margarine. For the streusel use cold vegan margarine or firm coconut oil. The muffins turn out slightly denser but just as moist.

  • Packed airtight at room temperature they stay moist for 2 to 3 days, in the fridge they dry out faster. Frozen they keep for up to 3 months, best individually in a box. To thaw, leave them at room temperature and give them 5 minutes in a warm oven, then the streusel is crunchy again.
