Apple Streusel Muffins with Cinnamon

Apple streusel muffins with cinnamon on a cooling rack with halved apples

Ingredients

For the muffins

  • 2 apples (about 300 gr (10.5 oz.), tart and firm)
  • 1/2 lemon (juice only)
  • 250 gr (8.8 oz.) flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 80 gr (2.8 oz.) brown sugar
  • 1 egg
  • 125 ml (1/2 cup) milk
  • 80 gr (2.8 oz.) butter (melted, slightly cooled)
  • 1 tsp vanilla extract

For the streusel

  • 100 gr (3.5 oz.) flour
  • 80 gr (2.8 oz.) sugar
  • 100 gr (3.5 oz.) butter (cold, in small pieces)
  • 1 pinch cinnamon

Equipment: 12-hole muffin tin, 12 paper liners, 2 large bowls, 1 small bowl for the streusel, Whisk, Cooling rack

Instructions

Prepare

  1. 1.Preheat the oven to 180 °C (350 °F) top and bottom heat and line the muffin tin with paper liners or grease it.
  2. 2.Peel and core the apples and cut them into small dice. Toss them with the lemon juice in a bowl so they do not brown.

Batter

  1. 1.In a large bowl mix the flour, baking powder, cinnamon and brown sugar.
  2. 2.In the second bowl whisk the egg, add the milk, melted butter and vanilla and stir to combine.
  3. 3.Pour the wet ingredients into the dry ones and stir only until just combined. Do not overmix, or the muffins turn tough.
  4. 4.Fold in the apple dice.
  5. 5.Fill the liners two thirds full with batter.

Streusel

  1. 1.In the small bowl mix the flour, sugar and cinnamon, add the cold butter and rub it in with your fingertips until coarse crumbs form.
  2. 2.Scatter the streusel over the muffins and press it down lightly.

Bake

  1. 1.Bake in the preheated oven for 20 to 25 minutes, until the streusel is golden brown and a toothpick comes out clean.
  2. 2.Let them rest briefly in the tin, then cool on a rack.

Notes

Tip from my kitchen: I melt the butter for the batter first so it is lukewarm by the time it meets the egg, hot butter would start to cook it. I cut the apple dice about the size of a hazelnut, smaller and they vanish into the batter, bigger and they make the muffins soggy. You can make the streusel the day before and keep it cold, it gets even crunchier in the oven that way. And really only fill the liners two thirds full, the streusel needs room, otherwise everything runs over the edge.
