A few weeks ago I pulled a cake out of our oven here in Bali that looked like a sad pancake. I had swapped the sugar for maple syrup, changed nothing else, and the batter had run straight across the pan. That was not bad luck. That was physics, and it is exactly what this article is about.
Replacing sugar in baking is one of the questions I get most often, and it always picks up in fall when baking season starts. The answer is rarely as simple as the label on the bag suggests. So here is what actually works in our kitchen, what doesn't, and where the honest limits are.

What does sugar do in a batter besides sweeten?
Sugar is not a flavoring in a batter. It is a structural ingredient with 5 jobs. It sweetens, which is the obvious one. It is hygroscopic, meaning it pulls in water and keeps a bake moist for days. It browns: in the oven it caramelizes and feeds the Maillard reaction that produces color and toasted flavor. It tenderizes, because it competes with the flour for water and slows gluten development. And when you cream it with fat, the crystal edges whip tiny air pockets into the mixture that expand in the oven.
That is why "just leave it out" goes wrong so often. You are not removing one ingredient. You are removing 5 functions at once. Knowing that makes every decision downstream easier.
The fastest place to notice it is the color. A batter with much less sugar stays pale in the oven even when it is cooked through in the middle. Go by the crust and give it another 10 minutes, and you pull out a dry cake with a pale top. With reduced-sugar recipes I go by the skewer test, never by how it looks.
Can you swap sugar one for one?
Only with crystalline substitutes like xylitol, and even then the browning changes. Anything liquid and anything fruit-based brings extra water into the batter and needs to be compensated for.
In practice the alternatives fall into 3 families. Crystalline ones such as whole cane sugar, coconut sugar, xylitol and erythritol behave most like sugar because they are dry. Liquid ones such as maple syrup, date syrup, brown rice syrup, agave nectar and honey carry roughly a fifth to a quarter of their weight in water. And fruit purées such as date paste, applesauce and mashed ripe banana are mostly water and fruit solids, and they change color and flavor on top of that.
The same logic runs through the rest of the baking pantry. We took apart egg substitutes that hold a bake together in a guide of their own, sorted by the job the egg was doing. And we worked through which fat suits which dough in baking without butter.
Which sugar substitutes for baking suit which dough?
Shortcrust pastry and crisp cookies need crystalline sweetness; cakes and muffins handle liquid and fruit sweetness best. That single fork in the road prevents most failed experiments.

Two rows of that table get misread all the time. Whole cane sugar and coconut sugar are the most convenient swaps in a batter, because they behave like sugar and need essentially no adjustment. Nutritionally they are still sugar, so what you are really swapping is the flavor. Applesauce and date paste are the opposite: they bring so much water that the batter is not the same recipe unless you correct for it.
How far ripe fruit alone can carry a bake shows up nicely in our banana chocolate granola bars. Three mashed bananas do most of the sweetening there, and the 2 tablespoons of maple syrup are a finishing touch rather than the foundation.
How do the conversions work, and what happens to the liquid?
As a starting point: 100 g (1/2 cup) of sugar becomes roughly 75 g (1/4 cup) of liquid syrup, and you take about 20 ml (1 1/2 tbsp) of milk or water back out of the batter. Fruit purées need more volume and a bigger correction.

Purees are the one place where cups let you down, so weigh the date paste, the applesauce and the banana if you can.
Here is what that looks like on a real recipe. Take a simple cake with 150 g (3/4 cup) of sugar and 200 ml (a generous 3/4 cup) of plant milk. To move it to maple syrup, multiply 150 by 0.75 and you get about 115 g (1/3 cup) of syrup. Take out one and a half times 20 ml, so roughly 30 ml (2 tbsp) of liquid, and pour in about 170 ml instead of 200 ml of plant milk. Drop the oven 10 °C (20 °F) and lay a sheet of parchment over the top toward the end, once the surface is as dark as you want it.
If you would rather use date paste, multiply 150 by 1.3 and you land at about 195 g. Then take out one and a half times 30 ml, so roughly 45 ml (3 tbsp) of liquid. The cake comes out darker and distinctly moister, and you will taste the dates. That is wonderful alongside chocolate, cinnamon and nuts, and completely wrong in a pale lemon cake.
Here is how far that can take you: in our plum cake with date-sweetened crumbles, dates and rolled oats carry the entire sweetness of the crumble layer. The fruit underneath brings enough that the cake never misses it.
Is honey, maple syrup or agave healthier than sugar?
Not in terms of your sugar intake. The World Health Organization explicitly counts honey, syrups and fruit juice concentrates as free sugars, the same category as white table sugar. Swapping sugar for maple syrup changes the flavor and adds a few trace minerals. It does not change the category.
The WHO recommends keeping free sugars under 10% of total daily energy, and notes additional benefit from going below 5%, which it puts at around 25 grams or 6 teaspoons a day.
There is one real distinction, though, and it matters: the WHO recommendation does not cover the sugars in fresh fruit and vegetables. A whole date is genuinely a different thing from the syrup pressed out of it. Dates carry roughly 63 grams of sugar per 100 grams according to FoodData Central at the US Department of Agriculture, a lot, but wrapped in fruit and fiber. For grocery shopping that means one thing above all: free sugars appear on an ingredient list under a lot of names. Glucose syrup, fructose syrup, invert sugar syrup and fruit juice concentrate all count, even where the word sugar never appears. If you want to keep an honest tally while you bake, count them in.
It is also why I skip added sweetener at breakfast. In our sweet quinoa with homemade apple compote the sweetener sits in the ingredient list as an optional spoonful, and in our kitchen it almost always stays out.
What can erythritol and xylitol do, and where do they stop?
Both are heat-stable and therefore genuinely bake-safe, but they replace only the sweetness, never the structure. That is where most one-for-one conversions come apart.
Both are sugar alcohols and both are authorised as sweeteners in the EU. The European Food Safety Authority lists erythritol as E 968 and xylitol as E 967; the erythritol re-evaluation was completed in 2023 and the xylitol one is still ongoing. Either way, a sweetener has to be named on the label by its name or its E number, so you can always tell what you are buying.
Being honest here means naming the downsides too, and those are purely a question of baking practice. Bakes made with erythritol crumble more in our kitchen, because the binding is missing, and some people taste a distinct cooling aftertaste, which I notice strongly myself. Xylitol behaves closest to table sugar by volume, which makes it the easier place to start. And one point that often gets lost: not every sweetener survives the oven. Several high-intensity sweeteners are not heat-stable and simply do not belong in a batter.
One safety note worth knowing if you bake with xylitol in a house with a dog. A review in Frontiers in Veterinary Science describes xylitol as a potent stimulator of insulin release in dogs, leading to a dramatic drop in blood glucose, and notes that ingestion has been associated with liver failure. Keep the bag and anything baked with it out of reach.
Where the two genuinely shine in our kitchen is crumbles and frostings. In a crumble topping what matters is that the sweetness stays dry and grainy, and that is exactly what xylitol and erythritol do well. In a frosting the missing binding does not matter either, because the fat is doing that job. The moment the sugar is supposed to melt and pull threads, as in caramel or meringue, you have hit the limit.
The most honest answer: just use less
After a lot of testing, my most useful conclusion is an unglamorous one. The most reliable method is not substitution, it is reduction. In the vast majority of cakes, muffins and bars you can cut the sugar by a quarter to a third and change nothing else at all. The structure holds, the browning holds, and after two weeks the original amount tastes too sweet.
It works best where a second ingredient brings sweetness and moisture at the same time. Our peanut butter banana bread with very ripe bananas is exactly that. And the moist zucchini hazelnut cake shows that a vegetable can supply the moisture the sugar would otherwise be holding.
Telling when you went one step too far is easier than it sounds, and it is not a matter of taste. It is the crumb. As long as the cake looks moist on the cut face and the slice holds together, the reduction is fine. Once it turns crumbly, the slice breaks as you lift it, or the surface feels sandy, put half of that last cut back the next time.
One thing to plan for: less sugar means a shorter shelf life. Sugar binds water and that is what keeps a bake fresh. A reduced-sugar cake is noticeably drier by day two, so I bake smaller pans and freeze half. And where the sugar is genuinely there to caramelize, as in the compote on our polenta cake with caramelized peaches, I simply leave it alone. Not every recipe needs reducing.

Frequently asked questions
Can I just leave the sugar out of a cake?
Rarely all of it, almost always some of it. In cakes, muffins and bars you can cut a quarter to a third without adjusting anything else. Beyond that, browning, tenderness and shelf life change noticeably, and the recipe needs an added moisture source such as applesauce or date paste.
How much maple syrup replaces 1 cup of sugar?
For 200 g (1 cup) of sugar use about 150 g (1/2 cup) of maple syrup, and take roughly 3 tablespoons of milk or water back out of the batter. Because syrup browns faster, drop the oven about 10 °C (20 °F) and tent the bake toward the end.
Is coconut sugar better than white sugar?
It tastes more caramelly and swaps in one for one, but nutritionally it is still sugar. For your sugar intake the switch makes no difference. For flavor, it makes a real one.
What sweetener keeps cookies crisp?
A crystalline one: whole cane sugar, coconut sugar or xylitol. Liquid sweeteners and fruit purées bring water into the dough, and water is the enemy of crisp. If you want to use syrup, plan on a softer cookie.
Does low-sugar baking spoil faster?
Yes. Sugar binds water, which is what keeps a bake moist. Reduced-sugar cakes are distinctly drier after two or three days. Bake smaller pans or freeze half right away and it stops mattering.
So, what now?
What I really want for you is this: don't chase the next miracle sweetener. Just find out how little sugar your favorite cake actually needs. Usually it is startlingly little, and afterwards the cake tastes more of fruit, nuts and spice than it did before.
