There is a moment I think everyone knows. The recipe is chosen, the bowl is out, and line two says "3 eggs." So you search for an egg substitute and get a list of twenty options in alphabetical order, from applesauce to yogurt, with not one word about which of them will work for the cake you are actually making.
I guessed from lists like that for years. Sometimes the cake was lovely. Sometimes it came out of the oven as a flat, damp disc, and I never had an explanation. The explanation turns out to be simple once you have it: an egg does two completely different jobs in a batter, and most substitutes can only do one of them. Pick the wrong one and you have replaced the wrong job.
So here is how I decide now. Not as a list, but as a table sorted by function, with the amounts that actually work in our kitchen, and with the places where, honestly, it stops working.

What does an egg actually do in a batter?
Eggs do 2 main jobs when you bake: they add lift, and they bind. Iowa State University Extension describes both jobs: eggs are among the binding agents that hold a dough together, while egg white contributes to rise and the egg proteins set with heat to fix the final texture.
That sounds like a small distinction. It is the whole point, because the two jobs have nothing to do with each other.
Binding means the ingredients hold together: the cookie does not crumble, the cake is still a cake when you slice it. Lift means air gets into the batter and it rises in the oven.
Because those are two different jobs, there is no single egg substitute. Applesauce binds beautifully and provides no lift whatsoever. Baking powder lifts beautifully and binds nothing at all. Swap the eggs in a butter cake for applesauce and change nothing else, and you get a moist, dense, fairly flat cake. Not because applesauce is bad, but because it did the wrong half of the work.
So the first question is never "what do I replace the egg with." It is: what was the egg doing here?
Two clues you can read straight off the recipe. If the recipe already calls for baking powder or yeast, the egg was mostly there to bind, because something else is handling the lift. If there is no leavening at all and the eggs get beaten for several minutes, lift was their job, and that is the harder case.
Which egg substitute fits which job?
Sort by job, not by ingredient. That leaves you two or three sensible options per case instead of twenty.

Two rows of this table combine, and that combination is the real trick for butter cakes: 60 g (1/4 cup) applesauce for the binding, plus half a teaspoon of baking soda with a little vinegar for the lift. Both halves of the work are covered, and the cake rises.
And what do you do when the recipe calls for 2 eggs? Do not simply double. Doubling works fine with flax and chia, because they bring almost no flavor of their own. With fruit purée it gets tricky: 120 g (1/2 cup) of applesauce carries so much liquid into the batter that it turns heavy and damp. So at 2 eggs I almost always mix. I replace the first egg with 60 g (1/4 cup) applesauce for the binding, and the second with a flax egg, or with half a teaspoon of baking soda plus an acid for the lift. The batter gets both jobs covered, and neither ingredient has to work beyond what it is good at.
How do you replace an egg for binding?
The most reliable option is a flax egg: mix 1 tbsp ground flaxseed with 3 tbsp water and let it sit for 10 minutes until it gels. That gel goes into the batter in place of the egg.
The word that matters is ground. Whole flaxseeds barely release their mucilage and travel through the cake unchanged. If whole seeds are all you have, pulse them in a blender or crush them in a mortar first.
Chia seeds work on the same principle in the same ratio, but they gel a little more and stay visible as small dots. In a pale vanilla cake that looks odd; in a waffle nobody notices. How much water chia takes up and how long it needs is in my guide to using chia seeds properly.
For anything that should be moist, applesauce is the nicer choice: 60 g (1/4 cup) per egg, straight in with the wet ingredients. It binds, adds moisture, and is barely detectable in the finished bake. Use unsweetened, or the whole thing tips sweet fast. And when it needs to be creamy, nothing beats silken tofu: 60 g (1/4 cup) blended smooth replaces one egg. It sets with heat in a similar way and makes fillings sliceable without making them heavy. How silken tofu differs from firm tofu is in my guide to cooking silken tofu.
How do you get lift without eggs?
Lift never comes from fruit purée. It comes from a leavener: baking powder, baking soda with an acid, or the carbonation in sparkling water.
Baking powder is the simplest route. An extra teaspoon, along with 2 tablespoons of liquid, compensates well for a missing egg in a butter cake. Do not overdo it: too much baking powder is easy to taste, and the cake tends to sink again after baking.
Baking soda is the more interesting option, but it only works with a partner. It needs an acid or nothing happens at all. Half a teaspoon of baking soda with a teaspoon of vinegar or lemon juice covers one egg. Mix both in just before baking, because the reaction starts immediately, and if the batter then sits for twenty minutes the air is gone.
For anything thin and quickly cooked there is a third route, and it is my favorite: sparkling water. About 3 tablespoons folded in last, then straight into the pan or the waffle iron. For pancakes and waffles it is the easiest trick there is.
How do you replace whipped egg whites?
With aquafaba, the thickened liquid from cooked chickpeas. About 3 tablespoons whipped for 5 to 10 minutes gives you a foam you can handle like beaten egg whites.
Why it works is well studied. The behavior comes mainly from the chickpea's proteins, carbohydrates and saponins, and it is that mixture that lets the foam form and hold.
You can use the liquid from a can or the cooking water from chickpeas you cooked yourself. Both work, but not equally well: a systematic review in the Journal of Food Science and Technology reports that canned aquafaba foams better, while home-cooked aquafaba is the stronger emulsifier. And here is the part almost no guide mentions. A study at the University of León baked meringues from several aquafaba variants against egg-white meringues. All of them foamed well, and the canned chickpea aquafaba came closest to egg white. But the aquafaba meringues had fewer air pockets, were harder, and fractured differently. That is not a failure and not a reason to skip it. It is simply a different result, and knowing it in advance beats standing over the baking sheet afterwards wondering what went wrong.

Which doughs need no egg at all?
Shortcrust, yeasted and puff doughs are classically made without eggs. If a recipe calls for one anyway, the simplest fix is usually to leave it out.
This is the section I wish someone had handed me ten years ago. You can spend hours hunting for the perfect substitute for something that never needed replacing.
Shortcrust lives on fat, flour and sugar; without egg it gets crisper rather than worse. Yeasted dough is raised by the yeast, not the egg; the egg makes it richer and more golden, but it is not what holds it together. And puff pastry works through layers of fat, not protein.
What you can do in these cases, if the dough looks dry: add about 2 tablespoons of plant milk or water per omitted egg. That covers the missing liquid, and nothing more is needed.
When does egg substitution stop working?
At roughly 3 eggs in a recipe, and in anything that gets its entire structure from beaten egg.
One egg in a butter cake is a detail. Four eggs in a sponge are the recipe. A sponge is egg, sugar and flour, and all of its height comes from air beaten into the eggs. There is nothing to substitute because there is almost nothing else there. The same goes for soufflé and for anything meant to come out of the oven tall and foamy.
The honest advice here is unglamorous: for those cases, do not look for a substitution method, look for a recipe that was designed without eggs from the start. A good vegan chocolate cake is not a converted butter cake, it is its own recipe with its own ratios.
One more thing that belongs here. Even when the swap works, the result is never identical. Egg-free bakes are often a little denser, and the surface stays paler because browning behaves differently. In our kitchen that counts as a characteristic rather than a flaw. But it is better to know beforehand.
