Hello lovelies, chocolate season doesn't take a summer break in our house – and this airy stracciatella parfait with berries is the delicious proof. Fine dark chocolate is grated straight into creamy vegan yogurt, sweetened with a little maple syrup and rounded off with almond butter, then layered with fresh raspberries and blackberries in pretty glasses. That's all there is to it: 5 ingredients, 10 minutes, no oven.

What I love most about it: the parfait practically begs to be made ahead. Layer the glasses in the morning, keep them chilled, and dessert is done before your guests even ring the doorbell. It's light enough to end a barbecue evening on a fresh note, and packed into jars it travels happily to any picnic. Served in a glass, those dark chocolate flecks against the berries simply look beautiful.

Why yogurt and dark chocolate are such a good team

The yogurt brings a fresh, slightly tangy base that plays perfectly against the sweet chocolate slivers and the fruity berries. A few teaspoons of almond butter round everything off with a gentle nuttiness and make the cream silky – no whipping cream needed. If you want it extra rich and creamy, reach for coconut yogurt; if you'd rather have more protein, soy yogurt is your friend. Either way, pick a thick, unsweetened variety so the layers stand tall in the glass.

Verena's notes

Tip from my kitchen: grate the chocolate really finely – that way it spreads evenly and you get that typical stracciatella effect. For clean layers I use tall, narrow glasses and quickly wipe the inside of the rim. The parfait is wonderful made the day before – just add the crunchy extra chocolate right before serving. If you like it sweeter, simply stir in a little more maple syrup.

INGREDIENTS

INSTRUCTIONS

  1. Finely grate the chocolate and stir it into the yogurt together with the maple syrup and almond butter.
  2. Add some of the berries to a glass and crush them lightly.
  3. Spoon the chocolate yogurt on top and, if you like, fill in another layer of berries and yogurt.
  4. Chill, and decorate with fresh berries and a little chocolate before serving.

  • Stracciatella stands for fine slivers of chocolate folded through a creamy base – the name comes from the Italian «stracciato» (torn). As a yogurt or cream dessert, stracciatella simply means plain yogurt or cream with grated dark chocolate. Here the chocolate is finely grated and folded into the yogurt.

  • Yes, this dessert is ideal for preparing in advance, which makes it perfect for guests. Layer the glasses up to a day ahead and keep them covered in the fridge. Sprinkle crunchy toppings like extra chocolate over the top just before serving so they stay crisp.

  • For an especially creamy parfait I like coconut yogurt best, because its higher fat content gives it the thickest, creamiest consistency. Soy yogurt is the higher-protein, more neutral-tasting alternative and works just as well. What matters is an unsweetened, fairly thick variety so the layers hold their shape nicely.

  • Covered, the parfait keeps in the fridge for about 2 to 3 days. It looks prettiest on the first day while the berries are fresh; after that some fruit juice may seep out. For the best consistency, enjoy it within 24 hours.

  • Yes, frozen berries work, but they release juice as they thaw, which can water down the clean layers and tint them pink. It's best to drain them well or add them just before serving. For the prettiest look in the glass, fresh raspberries and blackberries are the better choice.
