Stracciatella Parfait with Berries

Stracciatella parfait in a glass with chocolate shavings, raspberries and blackberries

Ingredients

  • 400 g (14 oz.) plain vegan yogurt (e.g. coconut or soy)
  • 50 g (1.8 oz.) fine dark chocolate (e.g. Alnatura)
  • 2 Tbsp maple syrup
  • 3 tsp almond butter
  • fresh raspberries and blackberries (a handful, for layering and decorating)

Equipment: fine grater, bowl, dessert glasses

Instructions

  1. 1.Finely grate the chocolate and stir it into the yogurt together with the maple syrup and almond butter.
  2. 2.Add some of the berries to a glass and crush them lightly.
  3. 3.Spoon the chocolate yogurt on top and, if you like, fill in another layer of berries and yogurt.
  4. 4.Chill, and decorate with fresh berries and a little chocolate before serving.

Notes

Tip from my kitchen: grate the chocolate really finely – that way it spreads evenly and you get that typical stracciatella effect. For clean layers I use tall, narrow glasses and quickly wipe the inside of the rim. The parfait is wonderful made the day before – just add the crunchy extra chocolate right before serving. If you like it sweeter, simply stir in a little more maple syrup.
