Hello lovelies,

do you like coconut water? We are huge fans! I think it is the ultimate refreshment – super delicious, healthy and full of vitamins. That is exactly why I love using it as the base for this creamy beetroot-berry smoothie: it tastes fresher than plain water and adds a few minerals along the way. Coconut water is also the base of my new green immune smoothie with spinach and ginger – there it meets avocado, banana and lime.

The smoothie is packed with important antioxidants and nutrients from the beetroot and berries. The coconut water keeps it fresh, and the dates let you adjust the sweetness to taste. I love it best as a bowl with plenty of toppings – fresh berries, granola, puffed amaranth, cacao nibs and a dollop of nut butter. I can never have too many toppings. :-)

Of course you can also just serve the smoothie in a glass, for example with a delicious coconut yogurt and even more berries.

And if this thirst quencher is supposed to become breakfast? Swap the coconut water for soy milk and add a spoonful each of peanut butter and hemp seeds. How that gets you to 25 to 30 grams of protein at breakfast, I wrote up step by step.

Verena's notes

Tip from my kitchen: for a thicker bowl use a little less coconut water and keep the berries frozen – that way the smoothie stays nice and cold and spoonable. For a creamier version, add a spoonful of coconut yogurt.

Frequently asked questions

  • coconut water tastes fresher than plain water and adds minerals such as potassium. it keeps the smoothie light and refreshing without weighing it down.

  • yes. without beetroot the smoothie is less earthy and a lighter color. instead of beetroot you can use more berries or a piece of banana for a creamy texture – the pink color then comes mainly from the berries.

  • you control the sweetness with the dates: 2 dates give a gentle sweetness, and you can simply add more if you like it sweeter. ripe berries and strawberries add natural sweetness too.

  • both work with the same recipe. for a bowl use a little less coconut water so the mixture stays thick, then top it with fresh berries, granola or puffed amaranth. for a glass, blend it a little more liquid.
