Hello lovelies, do you like coconut water? We are huge fans! I think it is the ultimate refreshment – super delicious, healthy and full of vitamins. That is exactly why I love using it as the base for this creamy beetroot-berry smoothie: it tastes fresher than plain water and adds a few minerals along the way.

The smoothie is packed with important antioxidants and nutrients from the beetroot and berries. The coconut water keeps it fresh, and the dates let you adjust the sweetness to taste. I love it best as a bowl with plenty of toppings – fresh berries, granola, puffed amaranth, cacao nibs and a dollop of nut butter. I can never have too many toppings. :-)

Of course you can also just serve the smoothie in a glass, for example with a delicious coconut yogurt and even more berries.

Verena's notes

Tip from my kitchen: for a thicker bowl use a little less coconut water and keep the berries frozen – that way the smoothie stays nice and cold and spoonable. For a creamier version, add a spoonful of coconut yogurt.

Creamy beetroot-berry smoothie with coconut water, frozen berries and dates. Blended in 5 minutes, vegan and full of antioxidants – as a bowl or in a glass.

INGREDIENTS

  • 1beetroot pre-cooked
  • 330mlcoconut water
  • 200gfrozen berries mixed or any kind you prefer
  • 2tspchia seeds
  • 1tspMaca powder optional
  • 5-6fresh strawberries
  • 2dates or more if you like it sweeter

INSTRUCTIONS

  1. Add all ingredients to a high-speed blender and blend until smooth
  2. Serve in a bowl or a glass
  3. Add toppings of your choice, such as fresh berries, cacao nibs, granola or puffed amaranth
