Hello lovelies, do you like coconut water? We are huge fans! I think it is the ultimate refreshment – super delicious, healthy and full of vitamins. That is exactly why I love using it as the base for this creamy beetroot-berry smoothie: it tastes fresher than plain water and adds a few minerals along the way.

The smoothie is packed with important antioxidants and nutrients from the beetroot and berries. The coconut water keeps it fresh, and the dates let you adjust the sweetness to taste. I love it best as a bowl with plenty of toppings – fresh berries, granola, puffed amaranth, cacao nibs and a dollop of nut butter. I can never have too many toppings. :-)

Of course you can also just serve the smoothie in a glass, for example with a delicious coconut yogurt and even more berries.
