Hello lovelies, on mornings when I need something fresh and good in a hurry, this green immune smoothie is my favorite. Spinach, banana and avocado make it wonderfully creamy, while coconut water, ginger and lime bring freshness – and best of all, it's ready in just 10 minutes. I love blending it whenever I feel like treating my body to a little extra hit of vitamins.

The lovely thing about green smoothies is how effortless they are: everything into the blender, a quick whizz, done. The avocado is my secret here – it gives a velvety texture without any dairy and keeps you full for ages. Fresh ginger and a squeeze of lime add the invigorating kick that suits the morning so well.

Depending on my mood I make it thicker or thinner – simply add more or less coconut water. A few ice cubes make it nicely cold, and a spoonful of nut butter or some rolled oats turn it into a little breakfast. Either way: a bright green start to the day that just does you good.

Verena's notes

Tip from my kitchen: a really ripe banana sweetens the smoothie all on its own – often you won't need the honey at all. For an extra cold, creamy texture I freeze the banana and avocado first and blend them frozen. You can easily swap the spinach for kale or a little lamb's lettuce. If you'd like the smoothie more filling, add a spoonful of nut butter or a few rolled oats.

INGREDIENTS

For the smoothie:

  • 1 handfulfresh spinach
  • 1ripe banana
  • 1/2avocado
  • 200ml (6.8 fl oz.)coconut water
  • 1lime juice only
  • 1tspgrated ginger
  • 1tspchia seeds
  • 1tsphoney optional

INSTRUCTIONS

Instructions

  1. Wash the fresh spinach in cold water, drain and pat dry.
  2. Peel the banana and break it into rough pieces, halve the avocado, remove the stone and scoop out the flesh.
  3. Squeeze the lime and finely grate the ginger.
  4. Add the spinach, banana, avocado, coconut water, lime juice, ginger, chia seeds and honey if using to the blender.
  5. Blend until smooth and creamy. Add more coconut water depending on how thick you like it.
  6. Pour into a glass, add ice cubes if you like, and enjoy right away.

Frequently asked questions

  • Simply swap the honey for maple syrup or agave nectar – or leave it out altogether, because a ripe banana brings plenty of natural sweetness on its own. All other ingredients are naturally plant-based.

  • It's best enjoyed freshly blended, but it keeps well in an airtight bottle in the fridge for up to half a day. Give it a quick shake or a second blend before drinking – the avocado and spinach tend to settle and the colour darkens slightly, but the flavour stays good.

  • Yes. Pour it into silicone ice cube moulds, freeze, then blend the cubes with a splash of fresh coconut water in the morning. Alternatively, freeze banana and avocado in portions – this chills the smoothie naturally and gives it a thick, creamy texture without extra ice.

  • Avocado gives the smoothie a velvety, creamy texture without any dairy. Its monounsaturated fats also help your body absorb the fat-soluble vitamins from the spinach more efficiently – and it keeps you full for longer.

  • As a light breakfast or snack it works perfectly: avocado, chia seeds and banana deliver healthy fats, fibre and natural energy. If you want it to carry you through to lunch, blend in a spoonful of nut butter or a tablespoon of rolled oats for extra staying power.
