Green Immune Smoothie with Spinach, Avocado and Ginger

For the smoothie
- 1 handful fresh spinach
- 1 ripe banana
- 1/2 avocado
- 200 ml (6.8 fl oz.) coconut water
- 1 lime (juice only)
- 1 tsp grated ginger
- 1 tsp chia seeds
- 1 tsp honey (optional)

- Wash the fresh spinach in cold water, drain and pat dry.
- Peel the banana and break it into rough pieces, halve the avocado, remove the stone and scoop out the flesh.
- Squeeze the lime and finely grate the ginger.
- Add the spinach, banana, avocado, coconut water, lime juice, ginger, chia seeds and honey if using to the blender.
- Blend until smooth and creamy. Add more coconut water depending on how thick you like it.
- Pour into a glass, add ice cubes if you like, and enjoy right away.
Notes
Tip from my kitchen: a really ripe banana sweetens the smoothie all on its own – often you won't need the honey at all. For an extra cold, creamy texture I freeze the banana and avocado first and blend them frozen. You can easily swap the spinach for kale or a little lamb's lettuce. If you'd like the smoothie more filling, add a spoonful of nut butter or a few rolled oats.
