Beetroot-berry smoothie with coconut water

Ingredients
- 1 beetroot (pre-cooked)
- 330 ml coconut water
- 200 g frozen berries (mixed or any kind you prefer)
- 2 tsp chia seeds
- 1 tsp Maca powder (optional)
- 5-6 fresh strawberries
- 2 dates (or more if you like it sweeter)
Instructions
- Add all ingredients to a high-speed blender and blend until smooth
- Serve in a bowl or a glass
- Add toppings of your choice, such as fresh berries, cacao nibs, granola or puffed amaranth
Notes
Tip from my kitchen: for a thicker bowl use a little less coconut water and keep the berries frozen – that way the smoothie stays nice and cold and spoonable. For a creamier version, add a spoonful of coconut yogurt.
