Hello lovelies, we are currently in the middle of a little heat wave here in Switzerland – not that we are complaining – which means one thing above all: ice cream, every single day and ideally more than once. Sometimes we grab a store-bought one when we are out and about, but what we love most is making it ourselves. And I mean the easiest ice cream there is: banana nicecream, made from a single ingredient – frozen bananas.
It is so creamy that no one would ever guess it is only made of bananas. Best of all, it is endlessly versatile. We topped and mixed the same base 3 ways the other day, and honestly, I could never pick a favourite – all three were just too good. So the only thing you need to make sure of from now on: always have frozen bananas in your freezer. I cut the ripe bananas into slices and freeze them in a reusable bag or box, so they are easy to portion.
The three ways
The base is always the same: blend frozen bananas in a high speed blender until creamy. Only then comes the fun part – the toppings. Here is how we enjoyed the nicecream that afternoon (from left to right):
Strawberry, chocolate and cacao nibs – fruity, chocolatey and with a lovely crunch from the nibs. For the chocolate note we love using our homemade chocolate spread.

Apricot and peanut butter – caramel-like and nutty, with the ripe apricots adding a summery sweetness.

Raspberry, berry soy yoghurt and sprinkles – fresh, berry-forward and, thanks to the sprinkles, a little treat for the kids too.
