Hello lovelies, on hot summer days there is hardly anything more refreshing at our house than these berry popsicles with coconut water. The recipe couldn't be any easier: it really only needs 2 ingredients – coconut water and berries – plus a few edible flowers and, if you like, some dark chocolate.

Add berries of your choice and a few edible flowers into the popsicle molds, then fill them up with coconut water and freeze over night. That way you always have a very delicious refreshment on hand.

If you prefer it a little sweeter or want them to be a dessert, dip the frozen popsicles in melted dark chocolate after the first freeze – also very tasty! My girls love both, and I happily let them have more than one, because these popsicles are not only refreshing but also a healthy alternative to regular ice cream.

This recipe is part of Delicious recipes with coconut water, where you will also find the creamy beetroot-berry smoothie with coconut water.

TIPS

Verena's notes

Tip from my kitchen: freezing time depends on the size of your molds – plan for a night to be safe. Scatter the berries loosely in the mold so the popsicles freeze evenly and look extra pretty. The time given covers preparation only; the freezing time comes on top.
