Hello lovelies,

on hot summer days there is hardly anything more refreshing at our house than these berry popsicles with coconut water. The recipe couldn't be any easier: it really only needs 2 ingredients – coconut water and berries – plus a few edible flowers and, if you like, some dark chocolate.

Add berries of your choice and a few edible flowers into the popsicle molds, then fill them up with coconut water and freeze over night. That way you always have a very delicious refreshment on hand.

If you prefer it a little sweeter or want them to be a dessert, dip the frozen popsicles in melted dark chocolate after the first freeze – also very tasty! My girls love both, and I happily let them have more than one, because these popsicles are not only refreshing but also a healthy alternative to regular ice cream.

Verena's notes

Tip from my kitchen: freezing time depends on the size of your molds – plan for a night to be safe. Scatter the berries loosely in the mold so the popsicles freeze evenly and look extra pretty. The time given covers preparation only; the freezing time comes on top.

  1. Distribute the berries and a few edible flowers into the popsicle molds
  2. Fill the molds with coconut water and insert the sticks
  3. Freeze over night (at least 6 hours) until the popsicles are solid
  4. To release them, briefly hold the mold under warm water and pull out the popsicle
  5. If you like, dip the frozen popsicles in melted dark chocolate and let them set again

Frequently asked questions

  • small or chopped berries such as blueberries, raspberries, blackberries or strawberries work best. fresh or frozen both work – so you can make them all year round.

  • ideally over night, but at least 6 hours until fully frozen. to release them, briefly hold the mold under warm water and the popsicle will slide out easily.

  • popsicle molds with sticks are handy. alternatively you can use small glasses or silicone molds with wooden sticks that you push in once the mixture has started to set.

  • after the first freeze, briefly dip the frozen popsicles in melted dark chocolate and let them set again. that turns the refreshing popsicles into a lovely dessert.
