Berry popsicles with coconut water

Prep: 10 minServings: 6 popsicles

Ingredients

  • 150 g berries of your choice (e.g. blueberries, raspberries or strawberries, fresh or frozen)
  • a few edible flowers (optional)
  • 330 ml coconut water (to fill, depending on the molds)
  • 100 g dark chocolate (optional, for dipping)

Instructions

  1. Distribute the berries and a few edible flowers into the popsicle molds
  2. Fill the molds with coconut water and insert the sticks
  3. Freeze over night (at least 6 hours) until the popsicles are solid
  4. To release them, briefly hold the mold under warm water and pull out the popsicle
  5. If you like, dip the frozen popsicles in melted dark chocolate and let them set again

Notes

Tip from my kitchen: freezing time depends on the size of your molds – plan for a night to be safe. Scatter the berries loosely in the mold so the popsicles freeze evenly and look extra pretty. The time given covers preparation only; the freezing time comes on top.
