Hello lovelies, today's recipe is fruity and a little playful: a sweet strawberry guacamole. Yes, you read that right – this isn't a savoury guacamole but a creamy dessert dip, where the avocado only provides the velvety texture while strawberries, honey and vanilla set the tone. At our place it's a real favourite on warm days, because it comes together quickly and needs no oven at all.

For the cream, avocado, Greek yogurt, honey, a squeeze of lime and a little vanilla go into the blender until everything is lovely and smooth. If you like, blend in a few mint leaves – it makes the dip even fresher. I dice the strawberries small and fold them in only at the end, so they stay recognisable as fruity little pieces.

You can barely taste the avocado – it mostly provides the creamy base that pairs so well with the sweet strawberries. A little lime zest on top, a few mint leaves, and the simple dip turns into a pretty dessert. My girls love dunking sweet crackers or biscuits into it.

The strawberry guacamole tastes best freshly made, while it's still bright and vibrant. It also works wonderfully on a summery apéro board or as a light dessert after a barbecue.

Verena's notes

Tip from my kitchen: fold the diced strawberries in only at the very end so they stay recognisable as little pieces and don't go mushy. The lime juice matters – it not only slows browning but also gives the sweet cream its necessary freshness. Strawberry guacamole tastes best freshly made; if you do have leftovers, press cling film directly onto the surface. For a vegan version simply use maple syrup and a plant-based yogurt.

INGREDIENTS

  • 2ripe avocados
  • 200gr (7 oz.)fresh strawberries
  • 100gr (3.5 oz.)Greek yogurt
  • 2Tbsphoney
  • 1Tbsplime juice
  • lime zest of 1 lime
  • 1tspvanilla extract
  • 1pinchsalt
  • mint leaves optional
  • sweet crackers or biscuits to serve

INSTRUCTIONS

  1. Halve the avocados, remove the stones and scoop the flesh into the blender.
  2. Add the Greek yogurt, honey, lime juice, lime zest and vanilla extract and blend until creamy.
  3. If you like, blend in a few mint leaves until finely distributed, then transfer the cream to a bowl.
  4. Wash the strawberries, remove the stems and cut them into small cubes.
  5. Season with a pinch of salt and gently fold the strawberries through the avocado cream.
  6. To serve, sprinkle with lime zest and arrange with sweet crackers or biscuits as a dessert.

Frequently asked questions

  • Barely. The avocado mainly provides the creamy, velvety texture, while strawberries, honey and vanilla clearly carry the flavour. Served fresh, you only get a subtle, mild background note. The longer it sits, the more the avocado comes through, so enjoy it soon after making it.

  • It tastes best straight away. Stored airtight in the fridge it keeps for about 1 day. The lime juice noticeably slows the avocado from browning, though the surface may darken slightly – just give it a quick stir. Freshly made, it looks and tastes its best.

  • Yes, very easily. Swap the honey for maple syrup or agave, and use a plant-based yogurt (for example coconut- or cashew-based) instead of Greek yogurt. The dip stays just as fruity and creamy, only fully plant-based.

  • It's perfect with sweet crackers or biscuits for dipping. It also works beautifully as a summery dip for fresh fruit, on a grazing or apéro board, or as a light dessert. A little lime zest and a few mint leaves on top turn it into a real eye-catcher.

  • Ripe, fragrant summer strawberries are ideal – they bring the natural sweetness. Out of season you can use other berries such as raspberries or blueberries. Frozen strawberries work too; thaw and drain them well before dicing so the dip doesn't get too runny.
