Hello lovelies, what would winter be without delicious, warming drinks. One of my highlights is a vegan gingerbread latte, and today I have a recipe for it for you. The gingerbread latte is super quick to make; I love the combination of espresso, oat milk and the fine spices that give this latte its very special note. I can tell you, the gingerbread latte is so easy and quick to make that you'll never want to drink one out again. At home with freshly baked cookies it's much cozier anyway.

Thanks to my dearly loved Sage the Oracle™ Touch* barista machine, every espresso, coffee and cappuccino simply turns out perfect, so I love trying new coffee creations. For the gingerbread latte I brewed fresh, strong espresso and also frothed a little oat milk. I can only absolutely recommend the machine – I've already written about it in more detail here. We use it daily, and for anyone thinking about getting a portafilter machine – this would make a great Christmas gift!

Espresso, oat milk and the right gingerbread spice

The secret to this latte lies in three things: a strong, freshly brewed espresso, creamy oat milk and a warm gingerbread spice of cinnamon, ginger, cloves and a pinch of cardamom. I warm the milk only gently so it stays nicely hot but not boiling – that keeps the foam stable and lets the spices unfold their full aroma. If you don't have a ready-made gingerbread spice on hand, you can mix one up in a few minutes and fill your kitchen with the scent of Christmas straight away.

When you make the latte yourself, you control how much sugar – or whether you add any at all. I rarely drink my coffee with sugar, so I only added a little date syrup to the milk. But one thing I can't do without for such a festive drink: a proper amount of whipped cream on top! It's just part of it, don't you think? Luckily there's great soy cream these days that whips up wonderfully.

On top of the cream I sprinkled more gingerbread spice and crumbled speculoos cookies, plus a few edible gold stars. After all, we drink with our eyes too, especially during Advent and the Christmas season.

I hope I've made you crave a gingerbread latte like this; "unfortunately" I was home alone that day and had to drink both right away – someone's got to make the sacrifice, after all :-).

Verena's notes

A tip from my kitchen: warm the oat milk only gently – it should be hot but not boiling, so the foam stays stable and the spice develops its full aroma. For an especially festive look, sprinkle a few crumbled speculoos cookies and a dusting of cinnamon over the cream. If you like it less sweet, simply reduce the date syrup to taste.

INGREDIENTS

INSTRUCTIONS

  1. Warm the oat milk with the date syrup and the spice until everything has dissolved well
  2. Divide into 2 glasses
  3. Pour a freshly brewed espresso into each
  4. Add a little frothed milk on top
  5. 2 Tbsp of whipped cream each as a topping
  6. Decorate with cinnamon and cookie crumbs and enjoy

Frequently asked questions

  • Oat milk is my favourite because it's naturally slightly sweet and creamy and froths well. Soy milk also works wonderfully and gives a particularly stable foam. Ideally reach for a barista variety – it's made specifically for frothing and won't split in the heat.

  • Yes, of course. Instead of espresso from the machine you can use strong coffee from a moka pot, a French press or a double instant espresso. If needed, froth the milk with a milk frother, a whisk, or simply shake it vigorously in a well-sealed jar and warm it briefly.

  • Mix cinnamon, ginger, cloves, cardamom, nutmeg and a pinch of allspice to taste. A classic ratio is roughly 3 parts cinnamon to 1 part each of the other spices. That way you always have a warm, festive blend on hand – not just for the latte, but for cookies and porridge too.

  • Absolutely. Simply use decaf espresso or brew the latte with a grain coffee. That way you can enjoy the festive drink in the evening too, without the caffeine keeping you awake.

  • If you prefer it lighter, just leave out the whipped cream and top the latte with a little firmly frothed oat milk. Alternatively, a cloud of whipped coconut cream works beautifully and brings a lovely hint of coconut.
