Hello lovelies, when the sun finally warms up again we make homemade iced tea almost every day – and this peach-melon iced tea is the whole family's favourite. Fruity peach, sweet melon and a hint of fresh mint make it wonderfully refreshing, without all the sugar of store-bought iced tea. My children like it best with lots of ice cubes and little melon balls floating on top.

The secret is in the syrup: I simmer peach and melon briefly with a little water and maple syrup, then strain and cool everything. That gives the tea its fruity flavour without turning it cloudy. I tend to sweeten sparingly anyway – you can always add more later, and the riper the fruit, the less you need.

I never throw away the leftover peach-melon pulp. Blended with a little coconut milk and a spoonful of cream it turns into a creamy ice cream in no time – so nothing at all goes to waste.

Verena's notes

Tip from my kitchen: the riper the peach and melon, the less maple syrup you need – taste the syrup before sweetening. For extra freshness I freeze some of the tea into ice cubes so the drink doesn't turn watery as they melt. I blend the leftover fruit pulp with a little coconut milk into a quick ice cream, so nothing goes to waste.

Tea

  1. Boil the water and pour the tea in a large pitcher – steep the tea, remove the teabags and let it cool off

Syrup

  1. Finely chop the peaches and melon, put them in a pot and let them boil up with water and maple syrup, slightly mash the fruits
  2. Let it simmer for about 10 minutes, then sieve it and let it cool off

Tea

  1. Pour the cooled off syrup to the tea, add juice of 1 lemon, mint, 1 sliced peach, melon and ice cubes
  2. If required add some more maple syrup – enjoy cold!

Frequently asked questions

  • Lean on the natural sweetness of ripe fruit and sweeten the tea only lightly with a little maple syrup. Because the peach-melon syrup is already fruity and mildly sweet, you barely need any extra – so the iced tea stays refreshing rather than cloying.

  • Yes. The tea and the syrup keep well and can be stored separately in the fridge – the syrup lasts a few days. Once mixed, the iced tea is best chilled and enjoyed within 2 to 3 days. Top it up with fresh fruit and ice cubes just before serving.

  • I like a ginger-turmeric tea, because its gentle warmth pairs beautifully with peach and melon. A mild green tea or a fruity herbal tea works just as well. For kids, choose a caffeine-free fruit tea.

  • Freeze some of the cooled tea or a little fruit juice into ice cubes and use those instead of plain ones. That way the iced tea doesn't dilute as the ice melts and stays full of flavour.

  • Don't throw away the strained peach-melon pulp. Blended with a little coconut milk and a spoonful of cream it makes a quick, creamy ice cream – or stir it into yoghurt or a smoothie.
