Hello lovelies, summer is sure to come around again soon, and then one thing can't be missing: this delicious orange-coconut ice cream. With a few but high-quality organic ingredients from my Migros*, I've created this delicious recipe for you. That way you know exactly what's in it and, above all, that the ice cream doesn't contain much sugar — so the whole family can enjoy it all summer long.

Organic Orange Juice

Above all I used one ingredient: organic orange juice. Even as a child I loved popsicles made from this simple ingredient. Super refreshing, quick to make and tasty — what more could you want as a child (and as a mom). The organic orange juice from my Migros is made from harvest-fresh-pressed, deep-frozen, non-concentrated fruit juice, which makes it especially aromatic and — what's particularly important to me — organically grown.

When it comes to oranges in particular, Migros focuses on sustainability and supports, for example, a women's cooperative in Brazil — you can read more about it here.

For my orange-coconut popsicles I also used Alnatura coconut milk, vegan honey, lime juice and fresh passion fruit — with these ingredients you can easily bring a little taste of the tropics home.

The ice cream turns out really tasty and is a little reminiscent of a well-known ice cream I loved eating as a child. But I'm sure that version contains significantly more sugar. Of course you can also just freeze the orange juice on its own as a popsicle — that version always goes down really well with the kids too, and then you can let them have more than 1 popsicle a day with a clear conscience.

Verena's notes

Tip from my kitchen: chill the coconut milk overnight and use a full-fat can — that is the only way enough firm coconut cream rises to the top to make the ice cream nice and creamy. Save the leftover liquid part for a smoothie. Before unmolding, briefly run the molds under warm water or let them thaw for 1–2 minutes so the pops slide out easily. For a fruitier version, add more passion fruit or a little puréed mango.

Orange-Coconut Ice Cream

Vegan orange-coconut ice cream pops made with coconut milk, organic orange juice and passion fruit. Low in sugar, ready in 10 minutes, no ice cream maker needed.

INGREDIENTS

  • 1cancoconut milk (400 ml)
  • 1Tbspcoconut flakes
  • 1Tbspvegan honey or maple syrup
  • juice1/2lime
  • 2passion fruit
  • organic orange juice

INSTRUCTIONS

  1. Put the coconut milk in the fridge overnight
  2. Now take out the solid part of the coconut milk and whip it with an immersion blender or hand mixer (whisk), stir in the coconut flakes, honey and lime juice
  3. Put the passion fruit pulp into the molds, spread the coconut mixture on top and fill up with orange juice
  4. Freeze overnight or for at least 4-5 hours and enjoy

  • The easy way is as pops: whip the firm coconut cream until smooth, stir in coconut flakes, vegan honey and lime juice, then layer it with passion fruit into popsicle molds. Top up with orange juice and freeze overnight — no ice cream maker required.

  • Chilling separates the coconut milk: the firm, fat-rich coconut cream rises to the top so you can scoop it out and whip it. That is what makes the ice cream creamy rather than watery, so use a full-fat coconut milk.

  • Yes, it contains no refined sugar. The sweetness comes from the organic orange juice and just 1 tablespoon of vegan honey or maple syrup, so you can happily share it with the kids all summer.

  • Absolutely. Simply leave the passion fruit out or swap it for puréed mango, berries or a little extra orange juice. For the simplest version, just freeze the orange juice on its own as pops.

  • At least 4–5 hours, ideally overnight, until fully set. Let the finished pops thaw for 1–2 minutes before unmolding, or briefly run the mold under warm water so they slide out easily.
