Crispy and healthy orange-carrot waffles

Hello lovelies, a weekend without waffles or pancakes, mmhm yes possible, but we prefer to have them. And since everyone in my house loves them, I always try to come up with new recipes and flavor combinations, so no one gets bored. And since I promised you lot of healthy recipes for the new year, I wanted to create a healthy yet delicious waffle recipe for you (and for us). The result is these crispy orange-carrot waffles - vegan, free of refined sugar and with an extra portion of veggies in the batter.

I have to admit, the last waffle recipes I made have not been super successful. The flavor was good, but they tend to fall apart in the waffle iron, stick to it or would not get crispy. But it's not as if I would give up after some set backs, not at all. This only makes me more ambitious to create a good recipe and lucky me, that's what happened with these waffles - yeah!

The waffles turned out to be super crispy on the outside and soft inside, they did not stick to the waffle iron, even without greasing - so just how you want your waffles to be! They are refined sugar free as well as without wheat flour (both things I don't use in my kitchen) and with the addition of the carrots and fresh orange they are also healthy.

We enjoyed the waffles with fresh oranges, coconut yoghurt, some mint, puffed amaranth and sea buckthorn sauce - such a good combination. But the girls also liked the waffles only with maple syrup - classic! I also like to add coconut blossom syrup, since I like the caramel flavor. Please make sure you are using organic oranges for the recipe. I can't recommend to use the zest if the oranges are not organic. And even if they are, make sure to wash them with hot water first.

The waffles are not only delicious for breakfast but also perfect for an afternoon snack with fresh fruits, and I can promise you, if you might have a picky eater when it comes to veggies, he or she could never tell there are carrots in the batter.

Verena's notes

Tip from my kitchen: if you use the zest, make sure to buy organic oranges and wash them well with hot water first. Finely grate the carrots or blitz them in a food processor – that way they almost disappear into the batter, perfect for little veggie-skeptics. Leftover waffles freeze beautifully and crisp right back up in the toaster. For a nutty note, stir 1 Tbsp of peanut butter into the batter.

Crispy vegan orange-carrot waffles with no refined sugar. Golden outside, fluffy inside – made with carrots, fresh orange and chia. Perfect for breakfast.

    INSTRUCTIONS

    1. Mix the milk with the apple cider vinegar and let sit for some time (the cider will thicken the milk a bit)
    2. Peel the carrots and finely grate them or blitz them in a food processor
    3. Add the peeled orange, finely chop or also blitz it
    4. Add the butter, chia seeds, sugar, peanut butter, vanilla, cinnamon, clove and orange zest (as much as you like) and mix well
    5. Add the flour and baking powder and gradually mix in the milk and water until you have a smooth batter
    6. Bake delicious waffles in your waffle iron

    Frequently asked questions

    • Yes. Swap the spelt flour for a gluten-free flour blend that contains a binder and use gluten-free baking powder. The batter becomes a little softer, but the waffles still bake up nicely crisp in the waffle iron.

    • Once cooled, the waffles keep in an airtight container for 2 to 3 days in the fridge. They also freeze well – just take out as many as you need and pop them in the toaster or waffle iron to make them lovely and crisp again.

    • It's best to bake the waffles fresh. You can, however, grate the carrots and blitz the orange the evening before and keep them covered in the fridge. In the morning you just stir the batter together quickly, so warm waffles are only minutes away.

    • Yes, the peanut butter is optional. It gives the waffles a subtle nutty note and a little extra bind, but they turn out well without it. For a nut allergy simply omit it or add a touch more vegan butter instead.

    • They're loveliest warm with fresh orange, coconut yoghurt and a little mint. The kids like them classic with maple syrup, and coconut blossom syrup goes wonderfully too. As a breakfast or afternoon snack they make a healthy, filling treat.
