Crispy and healthy orange-carrot waffles

Ingredients
- 3 carrots (midsized)
- 1 orange
- 3 Tbsp chia seeds
- 70 gr vegan butter
- 60 gr coconut blossom sugar
- 1 Tbsp peanut butter (optional)
- 160 gr spelt flour
- 150 ml vegan buttermilk (plant based milk mixed with 1 Tsp apple cider vinegar)
- 100 ml sparkling water
- 1 Tsp backing powder
- orange zest
- vanille extract
- Pinch of salt
- 1/2-1 Tsp cinnamon
- some clove
Instructions
- 1.Mix the milk with the apple cider vinegar and let sit for some time (the cider will thicken the milk a bit)
- 2.Peel the carrots and finely grate them or blitz them in a food processor
- 3.Add the peeled orange, finely chop or also blitz it
- 4.Add the butter, chia seeds, sugar, peanut butter, vanilla, cinnamon, clove and orange zest (as much as you like) and mix well
- 5.Add the flour and baking powder and gradually mix in the milk and water until you have a smooth batter
- 6.Bake delicious waffles in your waffle iron
Notes
Tip from my kitchen: if you use the zest, make sure to buy organic oranges and wash them well with hot water first. Finely grate the carrots or blitz them in a food processor – that way they almost disappear into the batter, perfect for little veggie-skeptics. Leftover waffles freeze beautifully and crisp right back up in the toaster. For a nutty note, stir 1 Tbsp of peanut butter into the batter.
