Spinach Tarte Flambée with Crème Fraîche and Almonds

Hello lovelies, there are evenings when I have no appetite for a yeast dough at all but very much do want something thin and crisp out of the oven. That is exactly what this spinach tarte flambée with crème fraîche and almonds is for. The dough needs 4 ingredients and half an hour of resting, nothing more, and yet what lands on the table looks like a small restaurant made it.

The topping is essentially one single bowl: chopped baby spinach, crème fraîche, grated cheese, onion, garlic and a few sun-dried tomatoes, seasoned with lemon and a pinch of nutmeg. This pairing of spinach and dough is an old favourite here, and it also sits inside my savoury spinach rolls from the oven, simply rolled up instead of flat.

The only thing that really matters is that the spinach is dry. Washed spinach still dripping with water softens the base from above, and at that point even the hottest oven cannot save it. So I spin it like salad and pat it down again afterwards.

The flaked almonds look like decoration but they are the reason this tarte works. They turn golden in the oven and give the bite that a soft spinach topping does not have on its own. Toasted bread usually plays that part for me otherwise, for instance alongside my creamy baked feta gnocchi with spinach.

250 gr (9 oz.) of flour turn into 2 tartes, and that is exactly what I make use of when people come over: 2 bases, 2 different toppings, both cut into strips. If you would rather work with tomatoes than spinach, the second base is covered by my vegan tomato quiche.

Verena's notes

Tip from my kitchen: the dough is the easiest thing in the world because it needs no yeast. Flour, salt, lukewarm water, olive oil, 5 minutes of kneading, 30 minutes of resting, done. Roll it thinner than feels right, because it shrinks back a little in the oven and only turns genuinely crisp that way. I always dry the washed spinach carefully, in a salad spinner if need be, because wet spinach softens the base from above. The flaked almonds are not a styling idea: they turn golden in the oven and give exactly the bite the soft topping is otherwise missing. And if you have guests, put 2 different toppings on the 2 bases and cut both into strips, then everyone gets to try everything.

INSTRUCTIONS

Make the dough

  1. Mix the flour and salt together in a large bowl.
  2. Add the lukewarm water and the olive oil.
  3. Knead everything into a smooth dough until it no longer sticks to your hands. This works by hand, with a hand mixer or in a stand mixer.
  4. Shape the dough into a ball, cover it with a clean tea towel and let it rest for 30 minutes.

Prepare the topping

  1. Wash the spinach, dry it well and chop it roughly.
  2. Peel and finely chop the onion and garlic, drain the sun-dried tomatoes and cut them small.
  3. Mix the spinach, onion, garlic and tomatoes with the crème fraîche and the grated cheese in a bowl.
  4. Season with a squeeze of lemon juice, salt, pepper and a pinch of nutmeg.

Roll out and bake

  1. Preheat the oven to 220°C (428°F), conventional heat.
  2. Halve the dough and roll both halves out very thinly on a floured surface, round or oblong.
  3. Lift the rolled bases onto a tray lined with parchment.
  4. Spread the spinach mixture over them and leave a small border free all around.
  5. Scatter over the flaked almonds.
  6. Bake in the preheated oven for 25 to 30 minutes, until the edge is golden and crisp.

Serve

  1. Take the tartes out of the oven, cut them into pieces and serve them hot straight away.

Frequently asked questions

  • Three things decide it. First, the dough has to be rolled genuinely thin, thinner than feels right, because it shrinks back a little as it bakes. Second, the oven has to be fully preheated to 220°C (428°F) before the tray goes in. And third, the topping must not be wet: wash the spinach early enough that it can drain and dry, otherwise the base steams from above instead of baking.

  • Yes. Use around 150 gr (5.3 oz.) of frozen spinach in place of the 200 gr (7 oz.) of fresh leaf spinach, because fresh spinach collapses a lot as it heats. Let it thaw completely and then squeeze it out properly, ideally in a clean tea towel. Frozen spinach carries a great deal of water, and that is the single most common reason for a soggy base.

  • Very easily. The dough needs 30 minutes of resting anyway, and covered it keeps for up to 24 hours in the fridge. Take it out 20 minutes before rolling, because cold dough keeps springing back as you work it. The spinach mixture can be stirred together the day before as well and keeps for 2 days in the fridge.

  • Sour cream works 1 to 1 and makes the topping a little lighter. Quark with a splash of cream is a good base too and gives a firmer result. For a vegan version use a whipped cashew cream, or oat cuisine with 1 teaspoon of lemon juice for the acidity, plus a vegan grated cheese. The dough itself is vegan anyway.

  • A green salad with a sharp mustard vinaigrette, mostly, because the tarte needs nothing else. If you want more on the table, bake the second base with a different topping and cut both into strips, which works beautifully on an evening with guests. Alongside it, a dry white wine, or cold apple juice with sparkling water for the children.
