Hello Lovelies, I'm pretty sure all the mums and dads out there know this feeling: more and more school parties are coming especially at the end of the year were they ask for a food contribution from the parents. And when I think of the ones I attended lately, then the buffet consisted mostly of sweet things like cake or muffins and people were desperately eating the chips someone had brought. So this time I though I was smarter and prepare something savory - for all those desperate and hungry people, since the school thing was in the evening.

I wanted to make something vegan of course, but it still should not be too special, so that everyone would enjoy it. Most practical thing is always finger food, since you don't want to cause any extra mess or too much inconvenience if people would need plates or cutlery. And another thing, it should also taste good cold, since you have to bring it and there is no opportunity to warm it at school. Puh lot of things to consider :-).

I decided to go for yeast rolls, since I know most people really like them, they are easy to prepare and usually fool proof as well. Filled with Spinach and au gratin with cheese (vegan cheese of course - I'm sure no one noticed) - just delicious.

I have to admit I don't know how people liked them at school, since I wasn't there that night, but we had to try them fresh out of the oben and we really liked them. I had to hide them from hubby and the kids, otherwise they would have already been gone until the evening.

The rolls are also delicious accompanied by a salad, as snack or perfect for a picknick or brunch. They would also be just the right thing for a New Years Eve celebration buffet. Make sure you try them, I'm certain you won't be disappointed and they are loved by non-vegans as well.

If you love these spinach rolls, I have more ideas for your buffet and cozy baking days: for a sweet spin on the very same yeast-roll trick there are my Vegan Raspberry Curd Yeast Rolls, for dipping I adore my creamy Spinach and Artichoke Dip, and for something crisp and savory try my Garlic Bread with Garlic Dip. I'd be so happy if you give the rolls a try – let me know how they turned out for you.

Yours, Verena

TIPS

Verena's notes

A tip from my kitchen: you can prepare the yeast dough ahead – let it prove overnight in the fridge, then bake the rolls fresh in the morning. Fully baked spinach rolls freeze well and crisp back up in the oven. Brush the rolls with a little oat cream before baking for an extra golden top. Instead of fresh spinach you can use about 150 g / 5 oz. of well-squeezed thawed frozen leaf spinach. How many rolls you get depends on how thick you slice them – cut them thinner for more bite-sized pieces for the buffet.

    Frequently asked questions

    • Yes. With puff pastry the rolls are quicker to make and turn out crisp and flaky. Yeast dough needs proving time, but in return the rolls stay soft, airy and more filling, a little like mini pizza buns. Both versions taste great warm or cold.

    • Yes. You can make the yeast dough a day ahead and let it prove overnight in the fridge. Fully baked rolls freeze well and crisp back up nicely in the oven, so you always have savory finger food ready for the buffet.

    • Yes, they are lovely warm or cold. That is what makes them so handy for a buffet, picnic, brunch or New Year's Eve spread – you can bake them ahead and there is nothing to keep warm.

    • A vegan pizza or grated cheese that is specifically made to melt works best, so the rolls bake up golden and gooey. If you don't have any on hand, scatter a little nutritional yeast on top for a savory, cheesy note.

    • Yes, frozen leaf spinach works well. Use about 150 g / 5 oz. of thawed spinach and squeeze it out thoroughly before using, so the filling isn't too wet and the dough doesn't turn soggy while baking.
