Hello lovelies,

it hardly gets more colorful than this pan: deep purple red cabbage, bright green broccoli, orange carrots and red bell pepper, with crispy tempeh cubes and salted cashews in between, all in a glossy teriyaki sauce. My red cabbage stir-fry with teriyaki tempeh is a vegan wok dish that tastes just as good as it looks, and it brings red cabbage to the table without hours of braising.

Tempeh in a sweet and savory marinade is very popular in our house right now. If you have already cooked my tempeh bulgogi with mushrooms and rice, you know the principle: marinate briefly, fry hard and bring it all together with a glossy sauce.

Why tempeh works so well

Tempeh is made from fermented soybeans and has a nutty, slightly mushroomy flavor. Unlike tofu, it has a firm, grainy texture that gets really crisp in the pan. In the marinade of teriyaki sauce, ginger and garlic it takes on lots of flavor in just 15 minutes, and that is exactly the time you need to cut the vegetables anyway.

I love how versatile tempeh is. Crumbled and roasted until crisp, it even becomes a topping, as in my pumpkin mango soup with tempeh crumble, which is often on our table in autumn.

In the wok the red cabbage turns crisp-tender in 7 to 10 minutes, keeps its bright color and gets a gentle sweetness from the teriyaki sauce. The cashews and sesame only go on right at the end so they stay nice and crunchy. We serve it with rice, and I like to take leftovers to the office the next day.

If you are in the mood for more from the wok, be sure to try my quick veggie stir-fry noodles, a recipe I have been cooking again and again for years.

Give this red cabbage stir-fry a try and tell me in the comments which vegetables go into your wok.

Yours, Verena

TIPS

Verena's notes

Tip from my kitchen: cut all the vegetables while the tempeh marinates, then everything in the wok goes really fast. If your pan is small, fry the tempeh in 2 batches so it gets properly crisp. Instead of green beans, snow peas or pak choi work well. We serve it with basmati rice or rice noodles, and if you like heat, add a pinch of chili flakes to the sauce.

INSTRUCTIONS

Marinate the tempeh

  1. Cut the tempeh into cubes of about 2 cm (3/4 inch). Peel the ginger and garlic and grate them finely.
  2. In a bowl, stir 4 Tbsp teriyaki sauce with the ginger, garlic and 1 Tbsp sesame oil, turn the tempeh cubes in it and let them marinate for 15 minutes.

Prepare the vegetables

  1. Wash the vegetables. Slice the red cabbage into fine strips, divide the broccoli into small florets and cut the beans into bite-sized pieces.
  2. Peel the carrots and cut them diagonally into pieces, seed the bell pepper and cut it into strips. Slice the spring onions into rings.

Stir together the sauce

  1. In a small bowl, stir the teriyaki sauce, soy sauce, maple syrup, lime juice, cornstarch and water until smooth.

Fry the tempeh and vegetables

  1. Heat the olive oil and sesame oil in a wok or large pan. Lift the tempeh cubes out of the marinade and fry them until golden all over.
  2. Add the red cabbage, broccoli, beans, carrots and bell pepper and fry for 7 to 10 minutes, stirring now and then, until the vegetables are crisp-tender.
  3. Stir the sauce once more, pour it over the vegetables and tempeh and toss everything together. Keep simmering for 1 to 2 minutes, stirring, until the sauce thickens and turns glossy.

Serve

  1. Season with salt and pepper if needed.
  2. Sprinkle with the cashews and sesame seeds, garnish with the spring onions and serve straight away.

Frequently asked questions

  • Classic teriyaki sauce is made from soy sauce, mirin, sugar and spices, so it is vegan. Some ready-made sauces do contain honey or fish extract, though, so it is worth checking the ingredient list. With maple syrup in the sauce the whole dish stays vegan.

  • No, tempeh is already cooked and can be marinated and fried straight away. If you like it milder, steam the cubes over boiling water for 10 minutes first. Afterwards they soak up the marinade even better.

  • Yes, firm tofu works very well. Pat it thoroughly dry, cut it into cubes and marinate it the same way. Tofu needs a little more patience in the pan until it is crisp all over.

  • Yes, as long as you slice it into fine strips. After 7 to 10 minutes over high heat it is crisp-tender and keeps a little crunch. If you like it softer, add it to the pan 2 to 3 minutes before the other vegetables.

  • Tightly covered, it keeps in the fridge for 2 to 3 days and is great for cooking ahead with rice. For leftovers I only sprinkle the cashews on after reheating so they stay crunchy.
