Hello lovelies,

in Hong Kong there is a stall on every other corner where somebody turns a waffle out of a strangely round iron, rolls it into a cone and stands it in a glass. These bubble waffles, called egg waffles there, now exist here in two versions: one sweet with vanilla and butter, and one savory with Parmesan and herbs. Crisp outside, airy inside, and you pull the little bubbles off one by one as you eat.

The secret sits unremarkably in the ingredient list: 2 tablespoons of cornstarch. It is why the shell turns crisp while the bubbles stay soft, and without it you simply get a thicker pancake waffle. After that the batter needs 10 minutes of rest, exactly like my waffles with strawberry mint sauce, which fill the same role in a classic iron.

That a waffle batter also works savory surprised me for a long time. In the savory batter, 100 gr (3.5 oz.) of grated Parmesan with oregano and basil replace the sugar, and what comes out is closer to focaccia than to breakfast. I bake my savory zucchini waffles with Parmesan on the same principle, only without bubbles and with vegetables in the batter.

Roll them immediately, while the waffle is warm and pliable, because once cooled it simply cracks through. Into the glass then goes whatever everyone feels like. If you have no bubble iron in the cupboard and still want something to roll and fill, turn my vegan crepes basic recipe into thin rounds, which become just as good a cone.

For an ordinary Sunday morning the bubble iron stays in the cupboard here anyway, because it is too much fuss for two waffles. On those days my coconut lime waffles with coconut milk come out of the classic iron instead.

Verena's notes

Tip from my kitchen: the cornstarch is not a detail, it is the reason for the crisp shell and the airy bubbles. Never leave it out, and give the batter its full 10 minutes of rest afterwards. The iron has to be completely preheated before the first batter goes in, otherwise the waffle sticks and tears when you open it. Roll immediately, while the waffle is still warm and pliable, because once cooled it cracks. The nutrition figures are for one sweet waffle without filling, since everyone loads them differently anyway. And do make both batters on the same evening, that is the whole appeal of this street food.

INSTRUCTIONS

Mix the sweet batter

  1. Combine the flour, baking powder, cornstarch and sugar in a bowl.
  2. Whisk the eggs, milk, water, vanilla extract and melted butter together in a second bowl.
  3. Add the wet ingredients to the dry ones and stir into a smooth batter.
  4. Let the batter rest for 10 minutes.

Mix the savory batter

  1. Combine the flour, baking powder, cornstarch, salt, oregano and basil in a bowl and fold in the grated Parmesan.
  2. Whisk the eggs, milk, water and olive oil together in a second bowl.
  3. Add the wet ingredients to the dry ones and stir into a smooth batter.
  4. Let this batter rest for 10 minutes as well.

Prepare the fillings

  1. For the savory version, cut the cherry tomatoes and the mozzarella into small pieces and put them in a bowl.
  2. Roughly chop the fresh basil, add it and toss everything with the olive oil, balsamic vinegar, salt and pepper.
  3. For the sweet version, wash and slice the strawberries and set out the remaining toppings.

Cook the bubble waffles

  1. Preheat the bubble waffle iron and grease it lightly.
  2. Pour in one portion of batter, close the iron and flip it once so the batter runs into both halves.
  3. Cook the waffle for 4 to 5 minutes until golden, and repeat until all the batter is used up.
  4. Lay the finished waffles out singly on a rack so they stay crisp.

Fill and serve

  1. Roll the waffles into a cone while still warm and stand them in a glass or a cup.
  2. Fill the sweet waffles with strawberries, vanilla ice cream, whipped cream, chocolate and sprinkles.
  3. Fill the savory waffles with the tomato mozzarella mixture and drizzle with balsamic glaze if you like.

Frequently asked questions

  • For the characteristic shape, yes. A bubble waffle iron has half-sphere moulds and flips through 180 degrees so the batter runs into both halves and the bubbles form. The batter works in a normal waffle iron too, but then you simply get ordinary waffles with no bubbles and no cone.

  • Usually the cornstarch or the resting time is missing. The starch is not a detail, it is exactly why the outside turns crisp while the bubbles stay soft inside. Let the batter stand for 10 minutes afterwards so the flour can hydrate. And never stack the finished waffles, lay them out singly on a rack instead, otherwise they soften in their own steam.

  • The 10 minutes of resting time are compulsory, and longer is fine too. The batter keeps for a good 12 hours in the fridge, after which the baking powder noticeably fades and the waffles rise less. Stir it well before cooking, because the flour and starch settle at the bottom. Freshly mixed still gives the airiest waffles.

  • On the sweet side, fresh strawberries, vanilla ice cream, whipped cream, chocolate and sprinkles are the classic, and in summer I also use berries and mango. On the savory side anything that is not too wet works: cherry tomatoes with mozzarella and basil, a drizzle of balsamic glaze, or cream cheese with arugula. The one rule is to roll the waffle while it is warm, because cold it cracks.

  • Yes, with three swaps. Replace the 2 eggs with 100 gr (3.5 oz.) of apple sauce or with 2 tablespoons of ground flaxseed and 6 tablespoons of water, the milk with oat or soy drink, and the butter with margarine or a neutral oil. In the savory batter use a vegan hard cheese or a mix of nutritional yeast and salt instead of Parmesan. The waffles come out a little less airy, but still crisp.
