Hello lovelies,

who would have thought waffles could be this pink? Beet waffles are my favorite proof that waffles do not always have to be sweet. Raw beets are puréed finely with the milk and turn the batter bright pink, then come soft goat cheese, a hint of rosemary and, on top, honey, goat cheese, arugula and toasted walnuts.

The idea came to me because my savory zucchini waffles with Parmesan are such a hit here. If zucchini works in the waffle iron, why not beets? The beet waffles are the fall and winter version of them, a little sweeter and with this incredible color.

Raw beets in the batter

The beets go into the blender raw and peeled, together with the milk. That gives you a smooth pink purée and saves you cooking them first. How to peel, store and prepare beets best is something I explain in detail in my guide how to cook and store beets.

To make the waffles light despite the heavy purée, I separate the eggs and fold in the stiff egg whites at the end. It makes a big difference, I promise.

When I buy beets, I usually take a whole bunch. The remaining ones become a beetroot salad with oranges and ricotta the next day, which also looks wonderful next to the waffles on the brunch table.

For brunch I bake the waffles just before the guests arrive and keep them warm in the oven at 80°C (176°F). Arugula, cheese and nuts go into bowls alongside, so everyone tops their own waffle.

And if anyone still wants something sweet afterwards, my apple cinnamon waffles with freshly grated apple are the perfect addition. I would love to hear how the beet waffles turned out for you.

TIPS

Verena's notes

Tip from my kitchen: purée the beets really finely, small pieces burn in the waffle iron and taste bitter. These waffles need a little longer than sweet ones, so leave them in the iron a minute longer and they turn crisp outside. Leftover waffles freeze well and crisp up again in the toaster. For kids I leave out the pepper and serve the pink waffles with cream cheese and cucumber slices, the color alone makes sure the plates come back empty.

INSTRUCTIONS

Purée the beets

  1. Peel the beets, cut them into pieces and purée them very finely with the milk in a blender.

Make the batter

  1. Combine the flour, baking powder, baking soda, salt, pepper and sugar in a large bowl.
  2. Separate the eggs. In a second bowl whisk the yolks, add the melted butter and the soft goat cheese and stir until smooth.
  3. Add the beet and milk mixture to the yolks and combine. Then add the wet ingredients to the dry ones and stir into a smooth batter. If the batter seems too runny, add 1 to 2 Tbsp of flour, depending on how juicy the beets are.
  4. Beat the egg whites until stiff in a third, clean bowl and fold them gently into the batter.

Bake the waffles

  1. Preheat the waffle iron and grease it lightly.
  2. Add one portion of batter at a time and bake the waffles for 4 to 5 minutes until crisp outside. Place the finished waffles on a wire rack.
  3. Meanwhile toast the walnuts in a dry pan for 3 to 4 minutes.

Serve

  1. Arrange the waffles on plates, scatter with crumbled goat cheese and rosemary and drizzle with honey.
  2. Serve with fresh arugula and the toasted walnuts.

Frequently asked questions

  • No. Raw beets are peeled and puréed finely together with the milk, which needs a strong blender. Precooked beets from the chilled aisle work too, they make the batter a little softer, so add 1 to 2 Tbsp more flour.

  • The stiffly beaten egg whites are folded in at the end and make the waffles light inside, even though the beet purée makes the batter fairly heavy. Fold them in gently so the air bubbles survive.

  • Yes, beet juice stains strongly. Wear disposable gloves when peeling and cut on a board that does not mark easily. Fresh stains on your hands come off with a little lemon juice and salt.

  • For brunch I serve them with arugula, goat cheese, honey and walnuts, for dinner with a big green salad. A dollop of sour cream with horseradish or a fried egg also goes beautifully with the earthy sweetness of the beets.

  • Yes. Plain cream cheese works instead of the soft goat cheese in the batter, and feta, burrata or a mild blue cheese instead of the goat cheese on top. What matters is a cheese with a little acidity to balance the sweetness of the beets.
