Hello lovelies,

you probably know red cabbage as a side dish, slowly braised with apple and cloves. Today I am showing you a version that surprised everyone in our family: roasted red cabbage steaks. Thick slices of the cabbage head are roasted with a glaze of balsamic vinegar, mustard and honey until the edges are crisp and caramelized. Feta, capers and hazelnuts go on top, and you have a dish that looks truly festive.

I simply love roasted vegetables in strong autumn colors. If you do too, take a look at my radicchio salad with oven-roasted vegetables, where slightly bitter purple leaves meet sweet roasted vegetables, much like here.

How to get the steaks right

The most important thing is the cut. Slice the cabbage head from top to bottom through the core into 2 cm (3/4 inch) thick slices. The core holds the leaves together, so the steaks do not fall apart when you turn them. A medium head gives you 4 to 5 nice slices. I never throw away the outer pieces; they end up finely shredded in a salad the next day.

The glaze of olive oil, balsamic vinegar, Dijon mustard, honey and garlic caramelizes in the oven and gives the cabbage a sweet and sour, slightly sharp note. Roasting makes cabbage mild and nutty in general, which you may know from my autumn salad with roasted Brussels sprouts, where even Brussels sprouts taste mild and almost sweet.

The hazelnuts and parsley are not a must, but for me they make the dish complete. With fresh bread it is a light dinner, and at Christmas I put the steaks on the festive table as a vegetarian side. They simply look beautiful on the platter.

If you prefer red cabbage quick and Asian-style, my udon noodles with red cabbage are a warm noodle version that is on the table in 30 minutes.

Give these red cabbage steaks a try and tell me in the comments whether they will be on your Christmas table.

Yours, Verena

TIPS

Verena's notes

Tip from my kitchen: a medium head gives 4 to 5 nice steaks, and I shred the outer leftovers for a red cabbage salad the next day. The darker the edges get, the better it tastes, so do not be afraid of a little color. I toast the hazelnuts briefly in a dry pan. Instead of feta, soft goat cheese works well too, and with maple syrup and vegan feta the dish is vegan.

INSTRUCTIONS

Prepare the red cabbage

  1. Preheat the oven to 200°C (392°F) conventional heat. Line a baking sheet with parchment paper and brush it with 1 Tbsp olive oil.
  2. Remove the outer leaves from the red cabbage. Using a large knife, cut the head from the top through the core into 2 cm (3/4 inch) thick slices and lay the steaks side by side on the baking sheet.

Stir together the glaze

  1. Peel the garlic and chop it finely or press it.
  2. In a small bowl, stir together the olive oil, balsamic vinegar, mustard, honey and garlic and season with salt and pepper.

Roast the red cabbage steaks

  1. Brush the steaks with about half of the glaze.
  2. Roast in the hot oven for 20 to 25 minutes, until tender and browned at the edges. Turn them after about 12 minutes and brush them with the rest of the glaze.

Serve

  1. Crumble the feta roughly and chop the parsley.
  2. Take the red cabbage steaks out of the oven, sprinkle them with feta, capers, hazelnuts and parsley and serve warm.

Frequently asked questions

  • Cut the head from top to bottom through the core into 2 cm (3/4 inch) thick slices. The core holds the leaves together. The slices from the middle of the head work best; the outer pieces tend to fall apart and are perfect for a salad.

  • At 200°C (392°F) conventional heat they need 20 to 25 minutes. Turn them halfway through and brush them with glaze once more. They are done when a knife slides easily into the core and the edges are dark and crisp.

  • Yes, replace the honey in the glaze with maple syrup and use vegan feta or a creamy tahini dip as the topping. Mustard, balsamic vinegar and capers are usually plant-based already.

  • For a light dinner we eat them with fresh bread or baked potatoes. With lentils or quinoa they become a filling meal, and at Christmas they make a special vegetarian side for the festive dinner.

  • You can stir the glaze together a day ahead and cut the cabbage in advance. The steaks are best baked fresh. Leftovers keep for 2 days in the fridge and warm up in the oven at 180°C (356°F) in about 10 minutes.
