Hello lovelies, little playful starters are a must for us during the Christmas season - and these puff pastry candies with dates are exactly that: sweet parcels of puff pastry that hide a sweet-and-savoury surprise of pan-fried curry-mango tofu, Medjool date and vegan cream cheese.

What sounds like an unusual combination at first is so tasty that you really have to hold yourself back from eating just one of these delicious candies. The sweet-and-savoury pairing is perfect as a starter or as a little treat from the kitchen.

Preparing them is really simple, and the result is no less impressive for it. The candy shape is perfect for placing a little parcel on each guest's plate - delighted reactions are guaranteed.

A little tip for success: don't use too much cream cheese and press the ends together firmly, so everything keeps its shape while baking. To finish, I tie the ends loosely with a blade of chives - that's when the parcels really start to look like candies.

Mango-curry tartare

Besides the tofu, this fresh starter also holds mango, red bell pepper and a colourful topping of radicchio and pomegranate seeds. Simple to prepare and yet a little flavour explosion - the perfect light opener for a festive menu.

Wafer-thin slices of beetroot, fresh orange and a topping of caramelised walnuts and curry-mango tofu, with rocket and a fine citrus-mustard dressing. An elegant carpaccio that prepares beautifully ahead.

Verena's notes

The candies are best straight from the oven, while the puff pastry is still nice and crisp. If you want to prepare them ahead, fill and shape them the day before, keep them well covered in the fridge and bake just before serving. Other soft dates work in place of Medjool - just cut the pitted pieces a little smaller. And a tip against leaking: don't use too much cream cheese and press the ends together firmly.

INGREDIENTS

INSTRUCTIONS

  1. Heat the oven to 180 degrees
  2. Cut the curry-mango tofu (smoked) into pieces (8 pieces), approx. 0.5 cm wide
  3. Fry them in a little coconut oil until crispy
  4. Roll out the puff pastry and cut into about 8 small rectangles
  5. Season the cream cheese with garlic powder and salt and place 1 teaspoon each on a puff pastry rectangle
  6. Halve and stone the dates, place a piece of tofu and half a date on top of the cream cheese
  7. Roll up the puff pastry and fold the ends to create a candy shape
  8. Place on baking paper and brush with soy cream
  9. Bake until golden for about 20-25 minutes
  10. "Knot" the ends with chives and serve the parcels warm or cold

  • Each parcel of vegan puff pastry holds a crisp piece of pan-fried curry-mango tofu, half a pitted Medjool date and a teaspoon of seasoned vegan cream cheese. The sweet-and-savoury filling makes every candy a little surprise.
