Hello lovelies, finally I’m back with a new recipe: Pumpkin hummus with roasted veggies! Pumpkin?! – yes you heard correctly, even though I’m super sad this glorious summer is coming to an end, I’m also really happy about the coming fall season. You can expect lots and lots of pumpkin recipes and the first one is this delicious pumpkin hummus. It’s very mild and this way perfect for the kids. Combined with the hearty oven roasted veggies it’s a great filling for wraps, goes well with a salad or just as a dip.

Here is the recipe:

Pumpkin hummus with roasted veggies

Prep Time: 20 minutes

Cook Time: 40 minutes

Total Time: 1 hour

Serving Size: 4

Pumpkin hummus with roasted veggies

  • 300 gr pumpkin (cooked)
  • 1 jar chickpeas
  • 2 Tbsp tahini
  • 2 Tbsp olive oil
  • juice of 1 lemon
  • 1/2 Tsp coriander
  • 1/2 Tsp cumin
  • 1 Tsp garlic powder
  • salt
  • pepper
  • paprika
  • Water of the chickpeas or some vegan cream
  • Veggies:
  • 5 purple potatoes
  • 2-3 parsnips
  • 2-3 carrots
  • 1 red pepper
  • 2-3 shallots
  • 2 Tbsp olive oil
  • salt
  • pepper
  • paprika
  • garlic powder
  • fresh thyme
  • fresh rosemary

  1. Cut the pumpkin into cubes and cook or steam it (you could also roast it in the oven or use frozen one)
  2. Drain the chickpeas, but keep the water
  3. Add all ingredients into a food processor or blender and mix well until well combined and creamy
  4. Add some chickpea liquid or cream until you have the perfect creaminess
  5. Season to taste with salt and pepper
  6. Veggies:
  7. Preheat the oven to 200 degree (400 F)
  8. Cut the veggies and shallots into pieces/cubes
  9. Mix with the spices and olive oil
  10. Add to a baking pan and cover with lot of fresh herbs
  11. Bake for 30-40 minutes until brown and crispy
  12. Layer on top of the hummus, sprinkle some paprika and drizzle of olive oil

If you like the hummus even more spicy or flavorful, you can also add 1-2 garlic cloves. And it also will have a more intensiv pumpkin flavor if you roast the pumpkin in the oven instead of cooking/steaming it. You can do that as you do with the veggies, cut in pieces, drizzle with olive oil, season with herbs and spices and roast until soft and browned.

I already have so many recipe ideas for pumpkin, but also fall in general. There will be a new recipe for a very delicious plum cake with streusel on the blog this week – so stay tuned! Or do you have any specific wishes for autumn recipes? Please don’t hesitate and send them to me, I always love to interact with you and to get your feedback!

And you can find some of my fall recipes from last year here.

Love, Verena
