Banana bread with walnuts and chocolate
INGREDIENTS
- 2Tbspchia seeds + 5 Tbsp water
- 2ripe bananas
- 100gr1/2 cup coconut blossom sugar (or cane sugar)
- 100ml1/2 cup plant based milk (e.g. soy, oat)
- 100ml1/2 cup sparkling water
- 100gr1/2 cup margarine (liquid)
- 1tspvanilla extract
- 300gr2 ½ cup spelt flour
- 1tspbaking soda
- 1tspbaking powder
- Pinchof salt
- 1Tbspapple cider vinegar
- 100gr3.5 oz. dark chocolate
- 75gr1/3 cup walnuts
INSTRUCTIONS
- Mix the chia seeds with water and let them soak for 5-10 minutes
- Mash the bananas using a fork or a mixer
- Mix water, milk, coconut blossom sugar and bananas
- Add the chia mix
- Melt the margarine and add it
- Mix flour, baking powder, baking soda, vanilla and salt and stir in with the moist ingredients
- Add apple cider vinegar and mix well
- Roughly chop walnuts and chocolate and fold them in
- Preheat the oven to 180°C (356°F)
- Grease and flour a loaf pan and add the dough to it. Decorate it with some of the chopped walnuts and chocolate and possibly with half an additional banana
- Bake for 60-70 minutes – check with a stick to make sure the dough is well done
