Almond sponge cake with berries
INGREDIENTS
- 100grground almonds
- 150grsugar i.e. coconut blossom sugar
- 1tspvanilla extract or vanilla powder
- 6Tbspcoconut oil melted
- 200grspelt flour
- 4tspbaking powder
- 250mlsparkling water
- 1Tbspcider vinegar
- cream i.e. whippable soy
- Berries
INSTRUCTIONS
- Preheat the oven to 180°C (356°F)
- Mix the almonds, sugar and vanilla
- Add flour and baking powder
- Add oil and sparkling water and mix well
- Add 1 Tbsp cider vinegar at the end
- Grease a springform or inlay it with baking paper
- Put the dough into the springform and bake for 30-40 minuten backen – check with a stick if well done
- Let cool off
- Whip the cream and sweeten it as you like – I added some elderflower sirup
- Put the whipped cream on top of the cake and add your berries to it
