Vegan pumpkin waffles

EQUIPMENT
- Waffle iron
INGREDIENTS
- 200 gr (1 ½ cups)flour (e.g. spelt)
- 100 gr (3/4 cup)buckwheat flour<br /> alternatively 300 gr (2 1/3 cup) spelt flour
- 1tspcinnamon
- 1tspbaking powder
- pinch ofsalt
- pinch of clove & nutmeg
- 5 Tbsp pumpkin puree
- 5Tbsp maple syrup
- 200 ml (1 cup) plant-based milk (e.g. soy or oat)
- 50ml (1/4 cup) sparkling water
INSTRUCTIONS
- Mix the flour with the herbs and the baking powder
- Add the moist ingredients and stir into a smooth dough
- Let the dough rest for a while (approx. 10 minutes), in the meantime preheat the waffle iron
- Grease the waffle iron and bake the waffles
- Serve them with maple syrup and fresh fruits
