

INGREDIENTS
- 1/2watermelon medium size
- 100gr (3.5 oz.) vegan feta (i.e. from Bedda)
- 1bunch resh rocket lettuce
- 1hand fullsalted pistachios
Dressing:
- 2tsp Dijon mustard coarse or fine
- 2tsp honey or maple syrup
- 2tsp apple cider vinegar
- 2tsp olive oil
- Spritzer lemon juice
- salt & pepper
INSTRUCTIONS
- Slice the watermelon in edible pieces
- Wash and slightly chop the rocket lettuce
- Dice the feta
- Peel the pistachios and roughly chop them
- Serve everything in a bowl and coat with the dressing
Dressing
- Add all ingredients into a jar and shake well
