Vegan pumpkin waffles

Ingredients
- 200 gr (1 ½ cups) flour ((e.g. spelt))
- 100 gr (3/4 cup) buckwheat flour<br /> (alternatively 300 gr (2 1/3 cup) spelt flour )
- 1 tsp cinnamon
- 1 tsp baking powder
- pinch of salt
- pinch of clove & nutmeg
- 5 Tbsp pumpkin puree
- 5 Tbsp maple syrup
- 200 ml (1 cup) plant-based milk ( (e.g. soy or oat))
- 50 ml (1/4 cup) sparkling water
Instructions
- Mix the flour with the herbs and the baking powder
- Add the moist ingredients and stir into a smooth dough
- Let the dough rest for a while (approx. 10 minutes), in the meantime preheat the waffle iron
- Grease the waffle iron and bake the waffles
- Serve them with maple syrup and fresh fruits
