Jackfruit Jalapeno Tacos

Ingredients
Jackfruit:
- 1 can of young jackfruit in brine (400 gr/14 oz.)
- 2-3 red onions
- 1 Tbsp pickled jalapenos in a jar
- 2 Tbsp olive oil
- Juice of 1/2 orange
- 1 Tbsp maple sirup
- 3 Tbsp soy sauce
- 2 Tbsp tomato paste
- 1/2 -1 tsp Knorr Jalapeno flakes
- 1 tsp paprika powder
- Salt
- Pepper
- 100 ml 1/2 cup water
White Sauce:
- 2 Tbsp vegan mayonnaise
- 2 Tbsp vegan sour cream
- 1 tsp apple cider vinegar
- 1 tsp lime
- Fresh cilantro
- Salt
- Pepper
- Tacos/Tortilla
- Lime
- Pickled jalapenos
- Corn
- Red cabbage – pickled in apple cider vinegar and salt
- Fresh cilantro
- small tacos/tortillas
Instructions
Jackfruit:
- Rinse the jackfruit and break it into pieces
- Chop the onion and roast it in a pan with oil for about 4-5 minutes
- Finely chop the jalapenos
- Add jackfruit and jalapenos to the pan and roast for 2-3 minutes
- Mix orange juice, soy sauce, maple sirup, tomato paste and the herbs and add it to the pan
- Roast for 5 minutes while stirring
- Deglaze with ½ cup of water and let simmer at medium heat with closed lid, until the liquid has reduced
- Smash the jackfruit with a fork
- Season once again and serve warm
White sauce:
- Finely chop cilantro and mix with all other ingredients
- Enjoy the tacos with the white sauce, jackfruit, corn, red cabbage, fresh cilantro and lime
Notes
Quick pickled red cabbage: Finely slice or grate the cabbage and mix it with apple cider vinegar and salt (place in fridge for at least 1 hour or longer)
